Grilling with Jeff: Smoked Bacon Wrapped Onion Rings by Jeff Karas, Engineering Electrician

Ingredients: 3-4 large sweet onions, 2 lbs thin sliced bacon, BBQ sauce, Your favorite rub. I use a mix of Cajun seasoning (1/4 cup), garlic powder (2 Tbs), onion powder (2Tbs). If you have a selection of seasonings feel free to mix in whatever you like. Directions: Cut the ends off the onions, then peel. Slice them into 1/2” pieces (you should get 3-4 slices from each onion). Remove the inner layers and use rings that are 2 layers thick. Lay the raw onion on a plate and brush with BBQ sauce, then sprinkle with rub. Flip them over and repeat. Wrap the onion ring with bacon, around the ring. (This might take a few strips depending on the size of your on- ion). Repeat process on remaining raw onion rings. Sprinkle a little more rub over the top. Get your smoker ready at 240 degrees or grill as long as it’s indirect heat. (I recommend using a Bradley rack, or weber grill pan or even a cooling rack as it will be easier to get them off of the main cooking great.) Make sure you have enough wood chips for 1 1/2-2 hours of smoke time. When the bacon is done the rings should have a good bite-thru, you might have to sample to check that. A few weeks ago a customer, Frank Jaskulka from Saputo R&D in Tulare, California, and I were leaving the Tulare plant and this little Chihuahua was walking by. The dog seemed very scared, was thin and had no collar. The pup was getting dangerously close to the road. Frank was very worried the dog would get hit by a car. He tried coaxing the dog to come to him but it was too scared. The dog continued up the sidewalk and Frank pursued slowly behind the little guy. Frank was determined to catch him and help him in some way. I had to go back in the Saputo plant for a few minutes and then was preparing to leave. When I left, I decided to drive up the street to see if Frank had given up on the dog or had left. I found Frank in a busy parking lot still trying to get the dog to come

to him. I asked Frank if he wanted me to get a hamburger from a McDonald’s which was only 100 feet away. Frank’s eyes lit up and said “would you”? I ran over, purchased the hamburger, hurried back and tossed the burger to Frank. Frank was on the phone at this time contacting animal control. He told me they are on their way. About 10 minutes had gone but animal control had not arrived. Frank was about out of hamburger so I asked if he want me to get another one. Frank’s eyes lit up again and he said “YES, would you”? I repeated my trip into Mc Donald’s and brought him back another burger. The poor little guy ate the second burger about the time animal control showed up. They retrieved the dog, thanked Frank and left. It was amazing to see how dedicated and determined Frank was to help this little Chihuahua. You could see the sadness in Franks eyes the whole time and also how happy he was when animal control came to help. Having this all said, Frank had a flight to catch back home and I have NO doubt he would have missed that flight if need be, to help the little Chihuahua.
