Pane Rustico, Italian Bread By Chuck Bell, Technical Product Manager for Pulverizers

This is Ana's cat Sterling who is a grey tabby cat that was adopted from Angels of Assisi at 6 months old. Sterling is now 7 years old and enjoys being spunky and mischievous. Her favorite thing to do is Yoga moves while sitting on Ana's lap. Sterling also enjoys playing fetch and begging for food.

Ingredients • 2.5 cups 13% pro flour • 1 3/4 cups warm water • 3/4 tsp dry activated yeast • 1.5 tsp salt • 4 tblsp extra virgin olive oil Instructions 1.Mix yeast into warm water. Make sure the water is 100-110F. 2. Combine flour, oil and water. Mix in a large wide bowl with a fork. Add salt halfway through. 3. Seal and let set for one hour 4. Uncover and fold over three complete times 5. Cover and let set for one hour 6. Roll and pinch with flour three complete times. Cover with a towel for ten minutes. Uncover and fold over and pinch the dough to form the loaf. Place the loaf on a floured cookie sheet 7. Cover for 10 minutes. Uncover and slit one side of top. Brush with olive oil or butter if desired. 8. Bake at 480 degrees about 20 minutes or when tapping the bottom sounds hollow.
