hether you call it fate, luck, or karma, Donna Lanzetta and Ryunosuke “Jesse” Matsuoka were

destined to share their passion for feeding the world in a healthy and ecologically sensitive way. Their current shared adventure is the establishment of Manna, a sustainable seafood farm in Hampton Bays, designed to counter the drastic dwindling of our worldwide stock of fish in a clean, organic environment. For Donna, whose father owned a fruit farm in upstate New York, a mother whose favorite meals to prepare were centered around fish, and a family butcher business, her early experience was a recipe for her current success. Donna’s passion for sustainable seafood production and concern for the world’s declining fish stocks motivated her to establish the Manna Ocean Foundation as a platform to share her ideas, and Manna Fish Farms as the place to implement them. Many of Jesse’s fondest, earliest memories are also of his childhood years spent in Japan with his mother, Artist Lynn Matsuoka. When dinner conversation became too long, Jesse recalls heading for the kitchen, to learn the menu, the ingredients, their origin, etc. Lynn particularly remembers Jesse’s ninth birthday, when he emerged from the kitchen in full chef uniform, and prepared dessert for the guests. The fish are fed from a huge underwater cylinder about 23 feet in diameter and just as tall. The rate of food release is controlled via remote control, mostly by a human being (Donna prefers it that way). Across Inlet Road from the hatchery, Manna at Lobster Inn Restaurant stands behind its owner’s motto that “every dish should exceed the expectations of our guests. To achieve this, our culinary team sources only the best, freshest ingredients.” Jesse strongly believes that his customers have a right to know exactly what fish they are eating, especially since much of the seafood sold in the United States is mismarked. Since his other passion is computer technology, every fish item on the Manna menu will have a QR code, linking to a complete provenance of the fish, sometimes including video interviews with the captain of the boat who caught it. The United Nations Food and Agricultural Organization warns that, to maintain the current level of the world’s seafood consumption, Aquaculture must double its output by 2030. Maintaining the purity of the final product is a specialized process using complex equipment. First, fingerlings are spawned in the onshore hatchery for a year. After that time, they are be placed

in submersible cages approximately 8 miles offshore, and down to a depth of 40 to 60 feet below the surface, where ocean currents can provide constant cleaning. According to Donna, the current cage of choice is the StormSafe Submersible Net Pen, which can hold up to 300,000 pounds of fish at the time of harvest. GOING DEEPER THE BEST DIVING ON THE EAST END

Natural Dive Sites. The 1781 sinking of the HMS Culloden in Fort Pond Bay, just west of Montauk Point, has naturally created one of Long Island’s premier dive sites. HMS Culloden was one of the British fleet of 14 war ships assigned to guard the local waters during the Revolutionary War. Sadly, it failed in its mission and came to rest in 15-25 ft of water off Will’s Point (now Culloden Point) in Montauk. Ponquogue Bridge in Hampton Bays, also considered one of the top diving locations around, has recently been upgraded and reconstructed. Fortunately for divers, the piers and pilings at the north and south ends were preserved, leaving prime diving opportunities intact. When planning any diving excursion, be sure to ask about certification, which is required by most businesses. If you are looking for scuba training on the East End, contact Hampton Dive Center in Riverhead. Whether you’re diving for recreation, curiosity or research, opportunities abound in our East End waters. It just took us going a little deeper to help find them.

It is fairly easy to find a place to go for a swim on the East End, with all the natural waterfront, coastline and swimming pools. If your passion is diving, however, finding the safest and tested locations is not as simple.

Good and safe diving locations in our area mostly fall into four categories: County and State Parks, Artificial Reefs, Charter Boats and Jetties. and Natural Dive Sites. The non-profit Long Island Divers Association (LIDA), along with offering lessons and certification, has become the de facto official center for information about local diving. According to LIDA President Barry Lipsky, its mission, along with encouraging the diving experience on Long Island, includes identifying and saving quality dive sites, protecting the rights of divers to waterfront access, and educating divers about the unique nature of our local ocean waters. Lipsky points out that our offshore diving areas differ from most others in several ways. Besides the sea floors being dotted with antique shipwrecks, the waters are colder,

darker, and have more currents than other geographic regions. County and State Parks. Cedar Beach sits on the south side of the North Fork facing Shelter Island Sound in the Peconic Bay. Cedar Beach County Park in Southold is free and open to the public, boasting over 2,800 feet of shoreline. There is a broad variety of marine life for viewing, including crabs, scallops, snails, fish and sponges. The area is regularly used by Cornell Cooperative Extension for marine life studies and experiments. Orient Beach State Park has 45,000 feet of frontage on Gardiner’s Bay, with two designated areas specifically recommended for scuba diving. Divers are required to obtain a permit to dive from New York State. Also on the North Fork is Clark’s Beach in Greenport, commonly referred to by the mysterious name

“Secret Beach”. Be sure to contact LIDA to arrange a visit and to get instructions for the lock, since LIDA controls beach access. Artificial Reefs. One of the most ambitious programs affecting the New York State diving community has been the development of the New York State Department of Environmental Conservation’s “Bureau of Marine Habitat Artificial Reef Program”. Thanks partly to major support by LIDA, Barry Lipsky and Governor Cuomo, in 2018 a plan was approved to build a dozen artificial reefs in the ”Marine District”, each 12 miles off the Atlantic coastline in 125-foot deep water. The reefs have multiple benefits. Firstly, building materials for the reefs are primarily large vessels that are out of commission and need disposal sites. Secondly, marine life is naturally attracted to these structures,

providing sea life with a safe living and breeding space, and plenty of subjects for study by divers. Our local artificial reef, Shinnecock Reef, is constructed from the materials of three barges, a tugboat, a wood drydock, two wood boats, a steel cruiser, a steel and concrete tower, two steel trawlers, surplus armored vehicles, and steel and concrete bridge rubble (mostly from the reconstruction of the Tappan Zee Bridge). Charter Boats and Jetties. Charters like Sea Turtle Charters in Montauk specialize in shark and scuba dive charters. Three recommended locations for diving include Fort Pond Bay at Navy Road and both sides of “the jetties” (Montauk Harbor eastside and westside).

To some on the East End, whale watching is considered a rite of passage.

A time honored experience that connects us to the original settlers of these seaside towns. This year the Coastal Research and Education Society of Long Island (CRESLI) partners with Montauk’s Viking Fleet for its 27th year of seaworthy adventure— and the only whale watching tour on the East End. On most excursions, spectators will have an opportunity to see many of the extensive species that reside in our waters starting with the crown of the Atlantic, the whale. In 2021, CRESLI had a 92% success rate of whale sightings including Finback, Minke, North Atlantic Right, Sei, Sperm, and of course, the celebrated Humpback whale. Other cetaceans boaters will commonly see during the approximately five-hour tour are the Short-beaked Common dolphin, Bottlenose dolphin, and Atlantic white-sided dolphin. There will also be sea turtles such as the Leatherback, Green, Loggerhead, and Kemp’s Ridley. Get those jaws ready, there are several shark species to encounter—the Blue, Basking, Great White, Hammerhead, Thresher, Shorten, and Mako. Some tours report sightings of the other-worldly Ocean Sunfish (which weigh between 540 and 4,400 pounds!), several kinds of tuna— Bluefin, Albacore, Yellowfin, Bigeye, Atlantic Bonito, False

Albacore, and Skipjack— along with Mahi Mahi, White and Blue Marlin, Atlantic Sailfish, and Swordfish. Beyond what’s below, there are various Pelagic birds on the ocean: numerous types of Shearwaters, Storm-Petrals, Fulmar, Gannet, Phalaropes, Jaegers, and several types of Gull. Since 1989, Arthur H. Kopelman, Ph.D, president of CRESLI and now retired marine mammal professor, has been conducting whale watching tours. “It never gets old. Watching interactions between dolphins or between whales, watching them feed or nurse. Or seeing Humpbacks breach. It’s just mind boggling,” Today, the scientist and educator still brings his four decades of expertise to the tours twice a week to keep the tradition alive. We also suggest packing your binoculars when heading to the beach, as many have recently reported sightings along the southern shoreline between Ditch Plains and Sagg Main beach– another exhilarating experience not to be missed. Whale watching tours begin July 3, 2022 and run Wednesdays and Sundays from 2:00-7:00 pm through early September. Floatation Therapy The Perfect Time Out

at Hamptons Float

Sometimes your body and mind just need a rest; a moment, a reprieve from life’s day-to-day. Sometimes you just need to float.

Imagine a period with no distractions; a time when “the brain stops receiving input from the body and goes into a deep state of rest.” That is the promise of float therapy, a practice scientifically proven to literally float your worries away, offered exclusively at Hamptons Float in aptly named Water Mill. Hamptons Float is a 2,100 square foot sanctuary and the only place on the entire East End dedicated to this healing technique. Avid floaters and owners Victor Williams and Steve Rosborough began the business as a way of sharing their love for floatation therapy with the Hamptons. “When our mind is calm, we are more present for others, more flexible in our approach to problems and happier,” Victor explained. “The ultimate goal would be to have a mind that feels at ease everywhere, no matter what circumstances we find ourselves in. The float tank helps facilitate that.” Floatation tanks, (also known as sensory deprivation tanks or isolation tanks) produce a zero-gravity environment that, without external stimulation, work to enhance the mind-body connection and allow the nervous system to completely reset. Each session at Hamptons Float begins with a shower, to rinse off natural body oils, before seven minutes of relaxing music plays to gently guide the mind into a state of nothingness. Then, with earplugs and eye protectors in place, the lights are turned off and, without outside sensory distractions, the body enters a state of pause. The tank, which measures 9 ft long by 4.5 ft wide and 11 inches deep, contains 1,200 to 1,400 pounds of medical grade Epsom salt. It’s this high concentration of salt that raises the density and buoyancy of the water so that the body can float on the surface, producing that zero-gravity sensation akin to being in the Dead Sea in Israel, but without the jet lag.

Both the water and air are set to 94.5 degrees, a temperature known as skin neutral. At this temperature “the brain stops receiving input from the body and goes into a deep state of rest. The goal is to completely melt and disappear into the water,” Victor said. “The breath is a neutral object and when we gently bring our attention to it we feel naturally calm. The float tank is like meditation on training wheels.” For many, floatation therapy is considered an introduction to meditation, a safe space to let things go. But the value is much deeper. According to the Epsom Salt Council, Epsom salt can be used to treat a myriad of ailments. It reduces inflammation to relieve chronic pain, relaxes the body to aid in better sleep, floatation therapy is how it enables the mind to break away from distraction and effortlessly flow into a deep meditative state. “We like to tell clients that the whole mental attitude of coming here is like laying in a hammock between two palm trees on the beach in the Caribbean.” Hamptons Float has four separate flotation tanks, each within an individual spa-like setting with personal shower and changing room separated by two soundproof walls. 90-minute float sessions are all it takes to unlock the potential of true mind- body restoration; a simple way to instantly acclima- tize to vacation mode, minimize jetlag or stress, and avoid the come-down of the work week or hectic summer day. 60-minute sessions are also available. TRIPOLI PATTERSON Riding a magical wave from surfing to artists’ champion

Tripoli Patterson is a conduit, channeling the universal language of fine art from creators to Tripoli Gallery, his warehouse gallery in Wainscott. Steeped in art from the go, Tripoli’s path was inspired by his mother Terry, who painted, his father Leonardo, who dealt in Pre-Columbian Art, and godmother Lisa De Kooning, daughter of abstract expressionist Willem de Kooning, who helped him open his first gallery space in Southampton at age 24. “Growing up around my father’s Pre- Columbian pieces and seeing that anciently charged practice…before a practice for financial gain… it was more a recording of

The result was the Alone Gallery, a series of four spotlight exhibitions lasting ten days in August of 2020. Visitors booked appointments online and received text messages giving them a keycode to enter the gallery, where they were allowed to experience the space by themselves in 30-minute windows, after which Patterson and his crew would return to sanitize touched surfaces for the next guests. “You think of all the mental traumas people have been dealing with during the pandemic, and art is such a fulfilling thing for our minds and our sanities— giving them a sense of comfort. Even though there weren’t people, art has a presence of people.” Along with his love of art, Tripoli inherited an affinity for surfing from his mother at a tender age. “I was eight, and I couldn’t swim. So I remember some early surf

sessions, when I fell off my board, just quickly grabbing my leash because I wasn’t a good swimmer. I kind of learned how to swim after learning how to surf. If you put yourself in those scenarios, the survival instinct is pretty good. I feel like that’s taught me how to do everything— I do it all backwards.” A champion by his teens, Patterson surfed all over the world, including Bali, New Zealand, and Oahu, where he enjoyed the hospitality of surf legend Rory Parker. But after a period of self-reflection, Tripoli decided to leave the competitive surfing circuit and direct his energy to providing a platform for artists. Upcoming plans include an exhibition of the works of Connie Fox and Robert Dash as well as an artist in residence program, where Tripoli will continue to create a portal for artists to transport and connect us across time and space.

histories or a recording of our brothers’ and sisters’ presence on the earth— these objects that are sacred and related to a portal or a craft connecting this world to a previous world or a future world,” he says. “I think when an artist is creating a work where they’re really lost in time, they have this – I keep on saying magic—but they have this kind of unknown thing they give to the piece. And then they continue on their journey, but they really leave a piece of themselves with that object they created from that kind of sacred space.” This sense of connection translates into his exhibitions, which aren’t bound by time, medium, or genre. “I give the main exhibition space to an artist to use as their studio; to let viewers have a glimpse into the practice but still acting as a medium between, maintaining the sacredness of the artist.” His most

recent Thanksgiving Collective show, “Arrivals,” featured a diverse spectrum of art including abstracted 1970s landscapes from Connie Fox, neon pieces from the late Keith Sonnier, witty animal portraits from Miles Partington, and emotionally evocative new paintings from Lauren West. Patterson explains: “It’s so great to have the artists around where we can talk to them and see what they were thinking. But a lot of times they’re not going to be present, and you have to just use the information they left us. Sometimes a painting can depict something that a language maybe can’t write.” This was certainly true when a mere six months after moving the gallery to Wainscott in November 2019, Patterson had to find an alternate way to fulfill his mission in the pandemic-shuttered world. Not only the artists, but their viewers could not be present.

Both programs have similar components such as swimming, running, paddle boarding, along with marine and beach educational activities, but are modified for each age group based on swimming abilities. Chief lifeguard for the Town of East Hampton, John Ryan, Jr., believes the confidence this program imbues in kids to succeed in the ocean or the bay and the safety standards they learn become valuable life skills.
