Hospitality Review - Dec 2016

her brother was living. She worked as a chef in Whistler before getting a job at the prestigious Chateau Lake Louise where she ended up as Chef de Partie running various sections in functions, banquets, patisserie and throughout the hotel’s seven dining areas. “I learnt a lot there and it really opened up my eyes to the possibility of working all over the world.” From there Kimbra worked as a Sous Chef in Switzerland, Spain, Portugal and the UK. In 1994 she came home to Hobart and decided she’d like to be a teacher. With no teaching spots available, she secured work locally at Wrest Point and the Wilson Training Centre

before gaining a job as a teaching assistant at Drysdale. A few years later she got a full-time teaching job at Drysdale and initially worked with trainees five days a week running the Café. “I’ve now worked at Drysdale for 20 years which I never thought would happen. I’ve had various roles within the organisation over the years including being a learning leader/manager several times.” Kimbra undertook the leadership program with Impact Solutions and which was sponsored by TAFE for 12mths to hone her leadership skills. Kimbra juggles her Drysdale work with running her own Catering business – Concept Catering. She says the most rewarding thing is seeing her students do well. “The biggest joy is seeing the students’ progress. Through this job you can help so many students.” Kimbra says her fellow Drysdale teachers and staff share her philosophy.

“Drysdale offers an incredible amount of support and mentoring – not just in the services that we provide, but in the passion of our teachers. Every teacher is a hundred percent focused on making a student better in whatever way they can – by sharing their knowledge or finding a job for them. We all want our students to succeed. “The Drysdale south building is also a great space – there are dedicated kitchens and bakery spaces, it’s central, it has a dedicated library, an on-site restaurant and a new barista training room. Students can do and see it, live and breathe it – it’s the hub of hospitality.” To find out more about training your apprentices at TasTAFE Drysdale contact: Kimbra Lockley on: 0409 402 017.
