Letter from the Editor I am not, nor have I ever been, a far- mer. I have worked with many far- mers over the years as customers, but I am not suited for the early mornings, late nights, or the stress of relying on just the right amount of rain – whether we are getting too much or not enough. I’ve worked with farmers whose

entire year’s worth of crops and hard work were wiped out by a late frost. I’ve spoken to those who were up until four in the morning covering their strawberries in hay to protect them from a cold snap, only to lose the crop to pests anyway. That kind of stress would have me handing in my John Deere! I have a deep respect for those who raise livestock. I know I couldn’t do it. I wouldn’t handle the ‘circle of life’ part very well. Delivering baby animals? Amazing, but I’d probably faint. Dealing with illness, predators, or anything beyond my control that might harm the animals? No, thank you. The emotional toll would do me in by week two. While I am most definitely a meat lover, it makes me sad seeing a trailer-load of pigs headed to their final destination, even sadder when I see an empty trailer. I respect our farmers for all the little things they do every single day to keep things running smoothly on the farm, only to have people turn around and say their prices are too high, then buy something shipped in from across the world. If you’ve ever stood beside someone picking through Ontario tomatoes while reaching for the ones from Mexico, you know what I mean. Of course, farmers grow more than just crops and livestock. They nurture people, too, family farms, generation after ge- neration. I have friends who grew up on farms, who tell stories about hauling tobacco leaves that were bigger than they were, and mornings that started with chores before the bus arrived. They talk about the hard work, but also about the pride, the love for what they do, and the deep respect it teaches them for the land and all that lives on it. We’re fortunate in our community to be surrounded by such dedicated growers, caretakers, and stewards. As we move into the later part of summer, the back-to-school season, and the heart of harvest, let’s give thanks. Let’s support our farmers, wave from our cars, and be patient when they’re inching along the road in machinery twice the size of our vehicle. And to the farmers of Elgin County, growers of food, family, and future, may your fields be fair, your animals healthy, your machines cooperative, and your neighbours understanding when your tractor takes up both lanes. More Than Meat: Evelyn’s Expands with Community in Mind At Evelyn’s Sausage Kitchen in Shedden, everything starts with quality, community, and a passion for good food made the right way. Known for handcrafted sausages, smoky pepperettes, tender beef jerky, and their ever-popular Polish coil, Evelyn’s is a place where tradition meets innovation, and where every product is made with care. The business may carry Evelyn’s name, but today it’s the Harris family who carry on the legacy. Carson Harris runs the processing side of operations, managing the careful timing and technique behind each batch of product. His mother, Heather, handles the business development, grant applications, long- term planning, and partnerships. Carson’s brother, Eric, is the assistant butcher, and Mikayla manages the retail store with warmth and attention to detail. Recent high school graduate Cooper is part of the team’s story, and two of Evelyn’s own family members remain involved and have become like family members to the Harris family. At the heart of Evelyn’s is its fresh sausage, made every Thursday with meat processed just days before. Everything is brought in deboned, minimizing waste and maximizing efficiency. The team trims it lean, grinds it twice for a smooth texture, and mixes it with their tried-and-true flavour profiles. The result is a line of fresh sausages, including garlic farmer, Oktoberfest, and classic breakfast links, that are often on the counter by Thursday afternoon and sold out by Saturday. “Our sausage is fresh, local, and made in small batches,” says Heather. “We don’t compromise on quality, and I think people really taste the difference.” But it doesn’t stop at sausages. Evelyn’s pepperettes and beef jerky are so popular that some customers stop in just to buy them by the handful. “We joke that it’s ‘man candy,’” Heather laughs. “We go through so much of it; it’s really become a staple for us.” Their Polish coil is another top seller, especially popular for entertaining. Whether it’s a snack tray, a quick lunch, or a cottage weekend, the products coming out of Evelyn’s are crafted to impress. The team has also built a bit of a cult following for what was once a secret menu item, the “Evelyn’s Assorted Sub.” Made with freshly cut meats and cheeses, local buns from COBS Bread, and topped with pickles, hot peppers, and more, the sub has doubled in popularity over the past year. “We’ve gone
from making a few dozen a week to hundreds,” says Heather. “Construction crews, regulars, catering orders -- it’s become a huge part of our retail.” But the team behind Evelyn’s isn’t only focused on what’s in the counter today, they’re building for tomorrow. One of the biggest projects underway is the construction of a brand-new processing facility on Talbot Line. This purpose-built space will address key bottlenecks like cooler space and smokehouse capacity, and it will also include a dedicated custom processing area, separating inspected product from wild game and custom orders. This will allow the team to streamline their schedule and reduce disruption during busy times, like hunting season. With this facility comes another exciting opportunity: co- packing for small producers. “If you’ve got a great recipe and want to bring it to the farmers’ market, we want to help you make that happen,” says Heather. “Right now, small businesses have to go to large co-packers in the GTA, and that can be expensive and out of reach. We want to offer a local, affordable option for people with passion and a product to share.” Across the road from their current location, another major transformation is underway. The old Shedden Fire Hall is being converted into a brand-new retail market. With five times the space of the current store, the market will offer Evelyn’s complete line of products alongside fresh produce, baked goods, cheeses, and specialty items from other local vendors. A commercial prep kitchen at the back will open up even more possibilities for future offerings and collaborations. “We really want this to be a destination for all things local and great,” says Heather. “We’re keeping nods to the original fire hall, some of the architecture, and old photos, so it still feels like Shedden. But inside, it will be fresh, welcoming, and full of quality products.” For the Harris family, Evelyn’s Sausage Kitchen is more than a business. It’s a labour of love, rooted in tradition but always looking forward. “We were lucky to take on something great and grow it,” Heather says. “This isn’t just about the bottom line. We want to build something our kids and grandkids will carry on one day. Something that makes our community proud.” And judging by the steady stream of customers, the ever- expanding product line, and the upcoming facility and market, they’re well on their way to doing just that, one sausage at a time. Demolition Derbies, Fire Muster, and Family Fun at the Aylmer Fair Enjoy some summer fun at the 177th annual Aylmer Fair, located at 139 Pine St. in Aylmer, from August 8th to 10th. The fairgrounds will be filled with excitement, tradition, and something for every member of the family. Run by the Aylmer Agricultural Society, this long-running event blends agricultural roots with big-ticket crowd favourites. Fair President Randy Laur, says this mix is key to its continued success. “We try to make sure we’ve got a little bit of everything for everybody,” says Randy. “There’s the Midway, the Demo Derby, the games… it all comes together to make one good event.” Friday’s festivities come with a bonus: kids under 12 get in free until 6 pm, and a free escape room will be available from 5 pm to 9 pm. Saturday, August 9th promises non-stop action with 1 pm and 7 pm Demolition Derbies, a Short Bus Demo Derby and even a Kids Demo Derby at 6 pm. That same evening, music fans can enjoy a live performance by Felicia McMinn from 8 pm to 11 pm. Finally, on Sunday, August 10th, the fair hosts its second annual Fire Muster & Games, starting at noon. Randy says the fairgrounds are an important gathering place for the community. “It’s a little bit there for everybody,” he says. “In July, we try to pull a big event that pulls in a lot of people.” That seems to be working. “We had over 230 hooks at the tractor pull this year and close to record crowds,” he adds. “Everybody seems to love the fair.” The Fair also plays a vital role in improving the fairgrounds and facilities. “The money goes back into repairs and upgrades,” Randy explains. “We’ve put new roofs on three of the buildings, Your one-stop truck accessory shop! new lighting, and updated water lines — we’re always trying to improve things.” The Aylmer Fairgrounds are busy beyond just the fair weekend, hosting events like the summer car show in July, which drew 300 cars and 85 swap meet vendors last year. In an era when many small-town fairs are disappearing, the Aylmer Fair is holding strong. “A lot of the smaller fairs are dwindling away,” says Randy, “but we seem to be doing pretty good. A pivotal moment came during his college years when he met producer Rick Hutt, a connection he credits with shaping much of his recording career: “Rick has been my producer for 43 years. We met in college and just clicked.” Still Strumming Strong: Jamie Warren’s Journey Through Country Music Jamie Warren may be one of Canada’s best-kept musical secrets, but within the country music world, he’s something of a legend. Regarded as the most awarded independent country artist in the country, Jamie’s accolades include Junos, Canadian Country Music Awards, and Ontario Country Music Awards. But if you ask him about his path to success, it starts not with a record deal or a big stage, but with piano lessons and a knuckle-rapping teacher. “My parents forced me into a life of music,” says Jamie with a laugh. “There was this lovely, little old lady who would wrap my knuckles with a ruler if my knuckles weren’t bent. I did that for three years until I was eight.” His parents eventually pulled him from piano, but with a caveat: “My mom said, ‘You will learn another instrument,’ and I picked guitar.” That led to eight years of conservatory guitar training, wedged in between hockey seasons and teenage ambitions. It wasn’t until he was 14 that things shifted. “That’s when I started writing songs,” he says. “It clued in that maybe this was something more. Playing guitar at parties was starting to feel more interesting than scoring the winning goal.” Writing gave him a sense of identity and expression. “I was a writer. Short stories, poetry, that was a release for me.”
In 1985, Jamie’s single Take Me Home Mississippi became a top ten hit and earned him the Canadian Country Music Association’s New Artist of the Year. “I was 25, and we had five hits on the radio in the 80s,” he recalls. Yet when the industry shifted toward more traditional country with the arrival of Randy Travis and Ricky Skaggs, Jamie found himself caught between genres. “People would say, ‘Sorry, man, you’re not country,’ and I’d go back to playing clubs.” Ironically, by the early 90s, Jamie’s style — once too con- temporary for country — was suddenly back in vogue.

He’s also written songs tied to personal milestones, like Do You Think of Me , a Father’s Day tribute to his dad, and Open a Window , a song focused on mental health. While he acknowledges the challenges of the modern mu- sic industry, fewer people listening to traditional radio, and the dominance of streaming, he’s optimistic: “The good news is that it gave a little more autonomy to independent artists. The bad news is, it dropped the money.”
“Somebody said to me, ‘You know that stuff you were doing in the 80s? I think it’s country again.’” He released new music and found a renewed audience. In a twist of fate, he was once again nominated for New Artist of the Year — nearly a decade after his first win. “Apparently, you can be new again,” he jokes. His sound is best described as con- temporary country, sometimes referred to as pop country, although he still values musical variety. “I still believe in creating an album, meaning 10 songs that aren’t all the same,” he avers. “Some singles, some laid-back story songs.” Songs like One Step Back, Sunny Day in the Park, and The Secret showcase his talent for emotional storytelling. Aylmer Artist Opens Studio and Heart for Elgin County Studio Tour Chris Dancey’s studio, nestled on the family farm at 51301 Wolleyville Line in Aylmer, is more than a workspace; it’s a reflection of a life lived with creativity, resilience and intention. As the owner of Art, Heart & Health Studio and Gallery, Chris is one of 20 artists participating in this year’s Elgin County Studio Tour, taking place on September 27 and 28. The free, self-guided tour invites the public into artists’ studios across the region, where they can meet the makers and see where the magic happens. For Chris, this year felt like the right time to open her doors. “It was a hard decision,” she shares. “I’m a reclusive person by nature, but this year just feels different. I decided to open both my studio and gardens, and it feels right.” Her gardens, inspired by Hugelkultur techniques and bursting with colour, are an extension of her artistic vision. Chris holds an honours degree in Fine Art from the University of Guelph and studied at universities in Manitoba and Calgary. Her artistic journey has taken her across continents, from silk dyeing under a master connected to Japan’s Living Treasures program to exhibiting in Stuttgart’s planetarium. Her current work combines sculpture and painting in highly tactile, mixed-media pieces that incorporate and repurpose hubcaps, 78 RPM records, and even old 45s. “I love working in three dimensions. It’s satisfying. I work with papier-mâché, found objects, whatever speaks to me.” Visitors to her studio will also find a passion for education. Although she hasn’t taught recently, her love of learning and sharing knowledge remains strong. “I used to teach everywhere HIGHLAND PHARMACY
— from the London Regional Art Gallery to my home. If people asked, I’d probably start again.” One of Chris’ favourite exercises involved what she calls the ‘cosmic blob’ technique. She explains: “I’d tell students to trust the cosmic blob. We’d drop black ink onto paper, spray it with water, and then go for lunch. When we came back, they’d look at the shapes until they felt something they wanted to bring out.” Two other artists are on the tour in Aylmer; Judy Mennill and Rosemary Carter, both at 51200 Vienna Line. Together with Chris, they represent the town’s vibrant creative community. Learning to Do by Doing with the Elgin 4-H For decades in Elgin County, 4-H has been a cornerstone of youth development, helping shape young leaders through hands-on learning. With the motto ‘Learn to do by doing’, 4-H empowers youth to build confidence, gain skills, and form lasting friendships— regardless of whether they grew up on a farm or in town. Roberta Gillard, President of Elgin County 4-H, says there truly is a club for everyone. “From dairy to gardening and everything in between, youth are invited to explore their interests, challenge themselves, and grow as individuals.” Participants must be at least 9 years old by December 31 of the previous year to take part in the following season’s clubs. Each club consists of approximately 12 hours of learning, spread over six meetings, and concludes with an Achievement Day where youth showcase what they’ve learned. Currently, four club projects are underway or about to begin. The East Elgin Dairy Calf Club will hold its Achievement Day at the Aylmer Fair on August 9 at 10:30 am, and the West Elgin Beef Club wraps up at the Wallacetown Fair on September 29 at 9:00 am. The Pickle Club offers a unique two-day and one-night program running from August 15 to 17 for members aged 14 and above at the Gay Lea Dairy Museum, located south of Aylmer. Wallacetown Fair Keeps Agricultural Roots Alive While Embracing New Generations The sound of laughter drifting through the midway, the taste of warm pie and fairground fries -- it is almost fair season in Wallacetown. From September 26th to 28th, the Wallacetown Fairgrounds at 24 Argyle Street will come alive with the sights, sounds, and flavours that for 165 years have defined this beloved fall tradition. With agricultural showcases, live entertainment, family fun, and a strong sense of community, the Wallacetown Fair is a must-visit celebration of rural life with something for everyone. “This property has grown over the years,” says Kim Carder, Fair Secretary. “The fair has always maintained it. We take pride in owning and caring for our own grounds.” Funds raised throughout the fair help pay for the maintenance of the fairgrounds. A strong agricultural focus remains the heart of the fair. “We’re one of the few fairs that really stick to our roots,” said Kim. “We still have the cattle and sheep shows, and we sponsor all the 4-H kids in the West Elgin Beef Club by covering their membership. That’s helped their numbers grow, and as things get more expensive, it’s made a big difference for families.” Friday night kicks off with a dance featuring local band, Big Shiny Toons. Saturday brings the high-flying action of ATVs and snowmobiles doing jumps and tricks, alongside the always popular agricultural shows. “I don’t know how they’re going to do it, but the videos we’ve seen are wild,” Kim laughs. Beyond the livestock, the fair is packed with family fun, featuring the stuffed animal pet show and junior ambassador
competition, a tractor pull, agility dogs, petting farm, and so much more. Additionally, the building features exhibits showcasing the culinary arts, field crops, and produce entries. Admission includes access to nearly all attractions, with food and midway rides available at additional cost. Advance midway wristbands are just $25, or $35 at the gate. “Once you’re in, everything else is free. We want families to have a fun time without worrying about being nickel and dimed.” While the fair celebrates its rural roots, it also welcomes urban visitors with open arms. “We advertise a lot,” Kim noted. Whether it’s invited guests from the surrounding area or welcoming home those who grew up here but now live elsewhere, Kim feels that everyone needs a little country fair in their life! There’s still time to get involved — the fair is currently accepting applications for food trucks, vendors, and the Fair Ambassador competition for young adults aged 18 to 25. For Kim, who has been involved with the fair for over 40 years, the magic is in the moments. “It’s about seeing people come back, families reconnecting, sitting down for a piece of pie. riding bikes so fast that you get the speed wobbles. We all have our go-to story of that time we did something that our mothers likely didn’t approve of, or weren’t aware of at the time. Those experiences develop skill, create memories, and sometimes become family legend. It is hard to see our children take risks, which is why it is essential to teach them, especially farm kids, to take calculated risks. To be creative, to explore, we need our young people to be willing to try things that feel scary. The farm is the perfect place for this. Every day, something changes; there is always something to explore, fix, or create. Will your kids do any of that the way you think they should? Not likely. But they may do it better, they may do it quicker, they may do it in a way you could never have thought of. You just need to give them the opportunity to do so. Fear, worry and anxiety all serve a purpose in keeping us safe, but risk-taking is a necessary skill to develop as children and to continue honing in adulthood. Whether we like it or not, risk and agriculture typically go hand in hand. As we all know, with a boss like Mother Nature, risk is something we all need to become proficient at managing! During these dog days of summer, we can support the next generation of agriculture superstars by supporting risk-taking. Will your heart be in your throat watching them climb that ladder to see if any shingles are loose? It absolutely will. Can they do it? Most likely. Do they want to test themselves and prove to you and to themselves they can do it? You bet they do. It is often our own fears that hold our children back. Along with allowing risks to be taken, it is also important to remind our children to listen to their feelings and instincts -- that’s where the calculated risk comes into play: there’s risk, and then there’s ‘risk’. Perhaps these fading days of summer are the perfect time to take some risk as a family and to show your future farmers that you can still climb a tree! Keep being outstanding in your field.
