The Feast of San Gennaro Italian Food at Its Finest

CHICKEN PARMIGIANA

Ingredients

• 1 egg, beaten • 2 ounces dry bread crumbs • 2 skinless, boneless Green Way chicken breasts, cut in half

Italians show appreciation and love for one another through food. It’s ingrained deeply into the culture that food is a way to bring people together and forge unbreakable bonds. This is most frequently over a dinner table or at a restaurant, but in September, it also happens in the streets of New York City. The Feast of San Gennaro is a celebration of all things Italian. Running for 92 years and attracting more than a million people annually, this New York City event is full of jubilation and, of course, wonderful food. Some of the most famous, exotic, and beautiful Italian food in the world is created between Houston Street and Canal Street during the 11-day festival.

• 1 1/2 cups (12 ounces) spaghetti sauce • 2 ounces shredded mozzarella cheese • 1/4 cup grated Parmesan cheese Directions

1. Heat oven to 350 F (175 C). Lightly grease a medium baking sheet. 2. Pour egg into a small, shallow bowl and beat lightly with a fork. Place bread crumbs in a separate shallow bowl. Dip chicken in egg, then into bread crumbs. Place coated chicken on baking sheet. 3. Bake for 40 minutes or until no longer pink and juices run clear. Do not turn off oven. 4. Pour 1/2 of the spaghetti sauce into a 7 x 11-inch baking dish. Add chicken and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top. 5. Cook for 20 more minutes.
