Overnight Oatmeal Pancakes
Celebrating National Dog Month
John loves pancakes, and these healthy overnight oatmeal pancakes are a new favorite! Hearty and packed with nutritious ingredients like rolled oats, whole wheat flour, and Greek yogurt, they make for a quick and easy breakfast your whole family will love (and Olive loves them, too!).
INGREDIENTS
• 1 1/2 cups unsweetened almond milk • 1 tbsp apple cider vinegar • 1 1/2 cups rolled oats • 2 large eggs • 1/4 cup plain Greek yogurt • 2 tbsp maple syrup, plus more for serving • 1 tsp vanilla extract
• 1/2 cup whole wheat pastry flour • 1 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt • 1/2 tsp ground cinnamon (optional) • 1 mashed banana (optional) • Blueberries (optional)
August is a special time for dog lovers as we celebrate National Dog Month, a month dedicated to honoring our loyal and loving canine companions. This celebration not only acknowledges the joy dogs bring into our lives but also raises awareness about the importance of responsible pet ownership and animal welfare. The origins of National Dog Month can be traced back to other celebrations. One of the most notable is National Dog Day, founded in the United States by animal advocate Colleen Paige in 2004. Celebrated annually on Aug. 26, National Dog Day was established to recognize the number of dogs that need to be rescued each year and to acknowledge family dogs and working dogs that selflessly provide companionship, protection, and assistance. As the love for dogs and the recognition of their contributions to society grew, the idea of dedicating an entire month to celebrate dogs gained traction. International Dog Month was created to extend the celebration beyond a single day, allowing for a more comprehensive focus on various aspects of canine life, including adoption, training, health, and the special bond between dogs and humans. August was chosen for National Dog Month to coincide with the end of summer, a time when many people are still enjoying outdoor activities with their pets. The warm weather provides the perfect opportunity for dog-related events, such as adoption drives, charity walks, and educational seminars. Additionally, August is a great time to emphasize the importance of protecting dogs from heat-related illnesses and ensuring they are well-cared for during the hotter months. And there’s no better time to adopt a dog from your local dog shelter. Still plenty of time to get them trained before snow falls, and there are so many sweet pups looking for their forever homes!
DIRECTIONS
1. Whisk almond milk and apple cider vinegar together in a medium bowl. Let sit for 1–2 minutes. Then add rolled oats and stir to combine. Cover and place in the fridge overnight. 2. The next morning, add the eggs, Greek yogurt, maple syrup, and vanilla to the oat mixture and stir to combine. 3. Combine flour, baking powder, baking soda, salt, cinnamon, and mashed banana, if using, add to the egg mixture, and stir until just combined. 4. Heat a nonstick skillet or griddle over medium heat coated with cooking spray. Once hot, pour pancake batter onto the skillet, using a 1/3 cup to measure. Sprinkle with blueberries, if using. 5. Cook until little bubbles start to form and you can easily get a spatula under the pancake. These pancakes take a little longer than regular pancakes to cook. Flip the pancake and cook for another 1–2 minutes or until the pancake is cooked through. Continue the process until you run out of batter. 6. Serve warm with a drizzle of maple syrup and banana slices or berries, if desired. Yummy!
