The Surprising Galilee 26.8 at the Canaan Hotel, Safed

The 26.8 wine bar, led by Chef Amos Hayon, brings the concept of a seasonal Israeli kitchen and a local repertoire to Safed. Hayon, who returned to the Galilee after experience in New York kitchens, offers a direct connection between raw ingredients and the diners. The name “26.8” comes from the distance between the hotel and the Galilean farmers who supply the ingredients, which is no more than 26.8 km. The menu changes with the season and includes dishes like seared bell peppers with Hameiri cheese, a sea bass skewer with brown butter, and amberjack sashimi. The space is intimate, the kitchen is open to the guests’ view, and the atmosphere is light and relaxed. The restaurant is open to both hotel guests and outside visitors. It operates from Sunday to Thursday from 6:00 PM to 11:00 PM, and on Fridays for lunch until 4:00 PM.

This is happening very soon, with the opening of the new boutique Reception Hotel in Dizengoff Square, the highly-anticipated restaurant Bel Ami is expected to open as well. The new restaurant comes to us from the Yarzin-Sella Group, which has already proven itself with beloved culinary institutions like Cafe Italia and ‘Magazzino’. Bel Ami is set to be a contemporary Parisian bistro in the heart of Tel Aviv, with meticulous design, selected wines, and an elegant chef’s menu. The vision is to offer an experience that combines the excitement of a new hotel opening with European class.

Jerusalem Renews Itself Zahara at the Nucha Hotel

In the new boutique hotel Nucha, which opened in the center of Jerusalem, you will find the chef’s restaurant Zahara, led by Chef Roi Ahdut. Much like the stylish hotel, the blooming terrace is the heart of the restaurant. The design is clean and elegant, and the menu offers high-end Mediterranean cuisine with French techniques and Asian influences. The concept eliminates the traditional division of courses in favor of family-style shared plates. Dairy with a View in Haifa Terrace at the Botanica Hotel

A new gem comes from the charming Botanica hotel, which is located in the heart of the Carmel, across from the Bahá ʼ í Gardens. At the front of the hotel is “Terrace” – a new chef restaurant by Chef Haim Dayan, a kosher, dairy and fish restaurant, connecting nature to the city. The magnificent view completes the atmosphere, and the appetizing menu offers a combination of light Mediterranean dishes alongside wines and cocktails specially crafted for the restaurant.
