• 2 qts water • 6 ½ cups apple cider, divided • 1 cup kosher salt + extra • ½ cup brown sugar • 12–14 sprigs fresh thyme, divided • 1 tbsp peppercorns
• 1 qt ice water • 6–7 lb whole chicken • ½ cup butter, softened • 3 sprigs fresh sage, divided • 1 orange • ½ tsp pepper, divided • 1 tbsp olive oil
• 1 onion, thick-sliced • 3 garlic cloves, peeled • 3 Gala apples, halved • 2 tbsp maple syrup • 1/3 cup flour • Chicken broth or extra cider as needed
1. Brine (12–24 hrs ahead): Heat 2 L water, 4 cups cider, salt, brown sugar, 3–4 thyme sprigs, and peppercorns until dissolved. Cool with 1 L ice water in a large container, submerge chicken breast-side down, cover, and refrigerate. 2. Prep Chicken: Remove from brine, pat dry, and air dry 1 hr. Mix butter with 1 tbsp each chopped thyme & sage, zest of ½ orange, ½ tsp salt, and ¼ tsp pepper; reserve 2 tbsp for apples. 3. Assemble & Roast: Heat oven to 350°F. Oil roasting pan, scatter onion, half-orange slices, garlic, and remaining thyme & sage. Place chicken on rack, stuff cavity with remaining orange half and thyme, rub with compound butter, truss legs, add 1 cup cider to pan, and roast 1 hr, tenting if browning too fast. 4. Add Apples & Glaze: Add apples to pan and brush with reserved butter. Reduce remaining 1 ½ cups cider by half; whisk in maple syrup and 1 tbsp butter. When chicken reaches 140°F, glaze every 10 min until 165°F (30–45 min more). 5. Make Gravy: Transfer chicken and apples to platter; tent with foil. Skim ¼ cup fat from pan juices into roasting pan. Whisk in flour over medium- high heat, then slowly add 3 cups liquid (juices + broth/cider). Simmer until thickened, season, and strain.
6. Serve: Carve chicken, arrange apples around platter, and serve with gravy.
