Mother’s Day Brunch An easy brunch every mother should enjoy on Mother’s Day – They’ve earned it! Strawberry Bellinis • 3 cups of strawberries, hulled and sliced • ¼ cup confectioners’ sugar • 1 tablespoon brandy • 1 ½ cups chilled sparkling wine • 3 large whole strawberries 1.Blend hulled strawberries, confectioners’ sugar, and brandy in a blender until smooth. Chill in the refrigerator for 10 minutes. 2.Divide the strawberry mixture among three champagne flutes. Pour ½ a cup sparkling wine into each flute and stir to combine. Garnish each glass with a whole strawberry.

Strawberry Pancakes • 1 cup all-purpose flour • 2 tablespoons brown sugar • 2 teaspoons baking powder • ¼ teaspoon salt, or to taste
• 1 cup milk • 1 large egg
• 2 tablespoons vegetable oil • 2 tablespoons vanilla extract • 1 cup chopped fresh strawberries 1.Stir flour, brown sugar, baking powder, and salt together in a medium bowl. Pour in milk, egg, oil, and vanilla; mix until well blended. Stir in strawberries. 2. Grease and heat a large skillet or griddle over medium heat. 3. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, for about 2 minutes more. Repeat with remaining batter.
