WATERMELON MARGARITA

INGREDIENTS

½ cup blanco tequila 5 cups cut watermelon ½ cup fresh lime juice Ice Lime wedge and coarse salt, for the glass rims

Salt the glass rims (optional): Rub a lime wedge around the rims of four glasses. Fill a small plate with coarse salt. Dip each glass into the salt to coat the rim. Fill with ice. Combine the tequila and half the jalapeño slices, if using. Set aside for 15 to 30 minutes to infuse (the longer you infuse, the spicier it will be). If you’re not using the jalapeño, skip this step and proceed with the recipe. In a blender, combine the watermelon with the lime juice and a handful of ice. Blend until smooth. Pour the watermelon juice into the prepared glasses. Stir two tablespoons of tequila into each glass. Taste and adjust, garnish and serve.

As temperatures drop, it doesn’t mean you have to say goodbye to all your favourite garden plants. Many popular outdoor varieties can transition beautifully to life indoors, adding greenery and charm to your home through the winter months. Here are five garden plants that can thrive inside with the right care: 1. Geraniums A garden favourite, geraniums are surprisingly easy to overwinter indoors. Place them in a bright, sunny window and cut them back slightly to encourage new growth. With minimal watering, they’ll continue to bloom throughout the season.

2. Herbs (Rosemary, Basil, Mint) Herbs are perfect candidates for indoor growing. Rosemary and mint are especially hardy, while basil prefers warm, sunny conditions. Use pots with good drainage and place them on a windowsill with lots of light. Bonus: fresh herbs at your fingertips all winter long! 3. Begonias Tuberous and wax begonias make lovely indoor houseplants. Dig them up before the first frost, pot them in well-draining soil, and place them where they’ll receive filtered sunlight. Their colourful blooms and striking foliage brighten any indoor space. 4. Coleus Known for their bold foliage, coleus plants can be rooted from cuttings and brought

Nothing says summer on PEI quite like strawberry cheesecake—and this no- bake version is as easy as it is delicious. Perfect for picnics, potlucks, or family get-togethers!

NO-BAKE STRAWBERRY CHEESECAKE

While the machine is running, pour in the cream and the liquid gelatin mixture and continue blending until your mix has thickened. Pour cheesecake filling over the prepared crust, cover with plastic wrap and refrigerate for at least six hours but preferably overnight. When ready to serve pipe on some whipped cream rosettes and place on fresh strawberries. Store the cheesecake for up to three days in the fridge. It also freezes well. Decorate with more lovely things— raspberries, blueberries, blackberries, lemons, roses, lavender, and honeysuckle— on top to create an impressive dessert.

INGREDIENTS

1/4 cup water 2 sachets (16 g) unflavoured powdered gelatin 3 cups plain biscuits (graham crackers or digestive biscuits) 1/2 cup butter, melted 3 cups fresh strawberries, hulled 1/3 cup granulated sugar 3 cups (24 oz) block cream cheese* 1 -1/2 cups heavy whipping cream Extra strawberries and whipped cream

METHOD

In a small bowl add the water and sprinkle over the gelatin. Set aside to set for 10 minutes. Blend the biscuits in a food processor until fine crumbs are fine. Pour in the butter and blend until the cookie base comes together. Press the cookies into a nine-inch spring- form pan in a even layer. Cover and place in the fridge until needed. Place the sponged gelatin in the microwave for 20 to 30 seconds until liquified. Let cool down for five minutes. In the food processor, puree the strawberries and sugar together until lump free.

*Use block cream cheese NOT spreadable cream cheese from a tub. Tubs of cream cheese have water added and are soft which will yield you a soft cream cheese that might not set.

Add in the cream cheese and blend until smooth.

Add about one tablespoon of the cream cheese mixture into the cooled liquid gelatin and swiftly whisk to combine. It’s the same technique as tempering and will ensure the gelatin does not lump when added and it will effectively set your cheesecake.

C hoosing the right neighbourhood is just as important as selecting the perfect house when buying a home. While you can renovate or update a home’s interior, you can’t change its location. The neighbourhood you choose will impact your lifestyle, commute, finances, and even your long-term satisfaction with your investment. Here’s how to make an informed decision when picking the right place to live. Start by identifying what matters most to you. Do you want a quiet residential street or a lively urban environment? Are schools, parks, and recreational facilities a priority? Make a list of your must-haves, like proximity to work, public transportation, shopping, or healthcare. If you have children or plan to, access to quality schools and family-friendly amenities may top your list.

Once you’ve narrowed down a few neighbourhoods, spend time researching them. Look into property values, crime rates, school rankings, and future development plans. Municipal websites, real estate platforms, and local news sources can provide valuable insights. You can also speak to a real estate agent who knows the area well and can help guide your decision based on your criteria. A neighbourhood can look very different at noon on a weekday compared to a Friday evening. Visit multiple times—during rush hour, on weekends, and in the evening—to get a feel for traffic, noise levels, and overall activity. This will give you a more accurate picture of what daily life in the neighbourhood is really like. Try chatting with people in the neighbourhood. Are they friendly? Do they take pride in their homes? Community spirit can enhance your experience and even affect your property value. Attend a local event or visit a café to get a sense of the social atmosphere. Buying a home is a major investment. Look for areas with signs of growth: new businesses, infrastructure

improvements, or planned developments. These can indicate rising property values. However, also consider affordability—emerging neighbourhoods may offer more bang for your buck. Evaluate your daily commute and access to public transit. Even the perfect house may not be worth it if it adds an hour of travel each day. Consider how close the neighbourhood is to work, schools, essential services, and major highways. Make sure the home you’re considering fits in with the neighbourhood. A beautifully renovated house surrounded by rundown properties might have trouble appreciating in value. Likewise, overextending your budget to buy in a more expensive area might limit your ability to update or furnish your new home.

balance between practical considerations and personal preferences. By doing your homework and taking time to explore, you’ll find a place that not only meets your current needs but feels like home for years to come.
