Flowers, Cookies, and Care THE UNEXPECTED GIFTS OF GRATITUDE THAT FUEL OUR CLINIC’S SPIRIT
November, home to Thanksgiving, is the best time to reflect on gratitude within our families and our communities. This is especially important during an election season that often feels like our country is being torn in half. Now more than ever, even the smallest displays of gratitude can make someone’s day! I consistently witness the outpouring of appreciation from our patients, and it genuinely never ceases to amaze and uplift me and the whole team. Just the other day, a patient who didn’t even have an appointment dropped by just to deliver fresh roses from his garden to our team. It’s moments like these — simple yet profound — that remind us of the beauty and kindness humans are capable of. Another patient brought in homemade cookies, and another generous soul made tamales for the whole staff! These gestures, small in size but enormous in sentiment, help cement a sense of community and appreciation within our clinic. This gratitude is vital in today’s climate, where divisiveness can take center stage. Regardless of the political winds, we have so much to be grateful for — the freedoms we enjoy, the community we serve, and the positive impacts we can have on
community that cares, supports, and looks out for each other. Personally, I’ve found a deep gratitude for our patients’ understanding of the new Medicare Concierge service we launched in August. It’s been rewarding to see how supportive our patients have been. This service has allowed us to partner more closely with our patients, especially those ages 65 and up, enhancing their ability to live more vibrant, active lives. I’m incredibly thankful for the opportunity to make such a significant impact. I’m also endlessly grateful for my team. Even though we are currently short-staffed, every team member’s dedication and high standards fill me with pride and appreciation. Everyone pulls their weight, continuously contributing to the well-being of our patients and the harmony of our workplace. It isn’t easy, but the whole team makes it work! I’m confident we’ll find the right people for our little community here at Penrose & Associates, but for now, I cannot be more grateful for our team members filling in all the gaps. As we continue to navigate these busy, sometimes challenging times, the random acts of kindness — whether it’s a card left on the last day of treatment, a thoughtful Google review, or just a sincere ‘thank you’ — are reminders of the good we do and the appreciation that flows back to us. This Thanksgiving, let’s aim to share more than just a meal. Let’s share stories, express our thanks, and remember that in a world that can sometimes be harsh, kindness and gratitude are the gifts we can all afford to give — and they are priceless!

Greek Chicken and Rice
INGREDIENTS
• 2 tbsp olive oil • 1 onion, diced • 2 cloves garlic, minced • 2 lbs boneless, skinless chicken breasts, cubed
• 2 cups chicken broth • 1 (14-oz) can diced tomatoes • 1 cup uncooked long-grain white rice • Juice of 1 lemon • 1/2 cup feta cheese • Salt and pepper, to taste
• 1 tsp dried oregano • 1 tsp dried thyme
DIRECTIONS
1. In a large skillet over medium heat, add olive oil and sauté onion and garlic until softened. 2. Add chicken, oregano, and thyme and cook until the chicken is no longer pink, about 3–4 minutes. 3. Pour in chicken broth, diced tomatoes, and rice. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes or until the rice is cooked through. 4. Stir in the lemon juice and feta cheese, then season with salt and pepper.
