Tortellini Metropolitan Compared to classic spinach tortellini, this dish has a much better nutritional profile. INGREDIENTS: • 4 l (4 quarts) water • 2 packages of 270 g (9 oz) spinach tortellini with cheese filling Sauce : • 5 ml (1 tsp) extra light olive oil with a dash of sesame oil • 15 ml (1 tbsp) finely chopped onion • 5 ml (1 tsp) minced garlic • 45 ml (3 tbsp) cornstarch • 250 ml (1 cup) strained yogurt • 250 g (8 oz) evaporated skim milk • 60 ml (1/4 cup) de-alcoholized white wine • 60 ml (1/4 cup) shredded Swiss cheese • 15 ml (1 tbsp) freshly grated Parmesan cheese • 5 ml (1 tsp) fresh chopped tarragon • 15 ml (1 tbsp) toasted cashew pieces Garnish : • 15 ml (1 tbsp) freshly squeezed lime juice • 15 ml (1 tbsp) toasted cashew pieces • 5 ml (1 tsp) tarragon • 5 ml (1 tsp) fresh chopped chives • 0,5 ml (1/8 tsp) freshly ground salt

DIRECTIONS: Bring the water to a boil, add the spinach tortellini, bring back to a boil and cook for 8 minutes. Drain the tortellini and set aside. Heat the olive oil in a saucepan and saute the onion and garlic. In a bowl, com- bine the cornstarch with the strained yogurt. Add the evaporated milk and the wine. Remove the saucepan from the heat and add the cornstarch- yogurt mixture. Return to the heat, bring to a boil and stir until thick- ened. Add the Swiss and Parmesan cheese, tarragon and cashews to the sauce. Pour the sauce into a large skil- let. Add the tortellini and toss until well coated. Spon the tortellini onto a plate and garnish with the lime juice, toasted cashews, tarragon and chives. Recipe and photo : Graham Kerr’s Smart Cooking, Doubleday.
