The intersection of Notre-Dame Street and St-Jacques Road in Embrun, just north of the Castor River, is a very busy one dominated by the glorious Église Saint-Jacques d'Embrun. The shadow of the massive and beautiful Catholic church, built in 1891, connects this long-established culture with a tiny “table” that’s kitty-corner to the towering silver neo-Baroque spire: that is, the Latin Table Restaurant, Authentic Mexican and Latin American Cuisine, which opened a few years ago. Enter the restaurant off busy Notre-Dame and you have a choice: turn left up the tight terra cotta stairs to the kitchen and the take-away counter, or right up the stairs to a small dining area with a handful of tables and chairs. Simply decorated with vibrant paintings depicting Central American village life, and assorted tchotchkes, overlooking the space is a poster of Frida Kahlo, the Mexican pain- ter whose folk art-style work drew inspiration from her country’s pop culture. Wooden tables hold salt and pepper sha- kers, the classic stainless steel fold napkin dispenser, bottles of McIlhenny Tabasco, and the restaurant’s house-made chili-oil sauce – which is quite delicious. In the kitchen of the small family-run “little corner,” a rinconcito you might say, is chef-owner Elena Monterrosa who opened the restaurant in 2019. Her daughter, Abby, explains that the family came to the Ottawa area as refugees from El Salvador in the 1990s. With no professional cooking background, and having not been involved in a restaurant or food operation before, Monterrosa is that somewhat rare cook and restaurateur who takes the leap of faith into the industry through a passion for sharing food with others. “It’s been a long-time dream of my mom’s,” Abby Monterrosa says. “She raised her children – we’re adults now – and so it seemed to be the right time and a good opportunity.” It was a bold entrepreneurial move that takes a steadfastness and a good amount of hard work. As they so often do in the industry, the Mexican and Latin American dishes Monter- rosa cooks come from her family heritage. “The recipes and techniques have been passed down to her. She cooks with fresh, good quality ingredients,” according to Abby, “and does it with what she’s been taught by her mom and grandmother.” The menu includes traditional North American breakfasts and their more inte- resting Salvadoran versions served with fried plantain and “casamiento” beans and rice,
Accepting that our teeth won’t last a lifetime is something that’s hard to accept. What can you do when you learn that you have to say goodbye to your teeth? Whether it’s the loss of a few teeth or your entire dentition, in both cases you have to accept the situation, and this loss of function can be very uncomfortable. Where do we go from here? All options point to some type of denture. Depending on the extent of your tooth loss, the situation will seem more or less serious. Most people can live with a full upper denture. On the other hand, many find it difficult to endure a full lower denture. This is where implant treatment comes in. Scared of dentures? No problem. You can opt for implant treatment for your upper dentition, lower dentition or both at the same time. There’s a very practical and popular treatment called «teeth in a day». This helps people who have to cope with tooth loss to get their dental implants in a matter of hours, greatly reducing the difficulties that such loss can cause. Preparations are made beforehand, so the day the teeth are removed, the new teeth are permanently placed too. This helps enormously with pain management, which is dramatically reduced to almost non-existent. Many patients can testify to this. The fear of losing teeth is real, but these revolutionary techniques go a long way towards easing the burden of tooth loss and making the situation less severe than imagined. their flavours “married” together. Lunches and dinners include enchiladas, tamales and tostones and fried yucca chips, along with quite good flautas – tortillas rolled and stuffed with a seasoned meat and fried crispy before being garnished with cheese, sour cream and fresh shredded iceberg lettuce – and an oven-baked Burrito Azteca with green and red sauces and pico de gallo. There are several vegetarian options, and other notable Central American items that are traditions are the horchata, a beverage made from rice, cinnamon and other spices, and aqua de flor de Jamaica (hibiscus iced tea), a variety of aquas frescas that is non- alcoholic and made with fruits, cereals or seeds, sugar and water. “These drinks are made from scratch, including the hibiscus flowers, using ingre- dients native to El Salvador,” Abby says.” But I had entered under the church spire’s shadow for perhaps my favourite Salvadoran dish: pupusas, a dish not easily found in the area, says Abby. Essentially a thick pancake made from a cornmeal flour, the pupusa is, for me, a pure delight to eat. Often termed the national dish of El Salavador, the pupusa is stuffed and fried on a hot flat-top griddle and served with some sort of salsa and a curtido, a slaw whose acidity nicely tempers the often rich corn cake. Stuffed variously with cheese, refried
beans, chicken, pork or loroco – a climbing vine with edible flowers that is native to Central American – pupusas come off of Monterrosa’s griddle piping hot, crispy on the outside and moist inside. The rich morsels are gluten-free – and you can eat them by hand (when they cool). Pupusas are formed by hand, starting with an indentation into which ingredients, like the beans are stuffed, and the pancake then flattened by patting down the ball as it is rotated between the cook’s palms. “It’s quite an artform and not as easy as it seems,” says Abby. “Pupusas are eaten at all times of the day. They’re a hearty dish that fill you.” In the shaping of a humble corn-flour pancake to make a pupusa, and in cooking other menu items that are family recipes, Monterrosa is forming a connection with the neighbourhoods and residents around her with food. “It’s a lot of pride for her to be able to share this part of her culture, and her skills, with this community,” Abby says. Munching a trio of piping hot stuffed pupusas with some curtido and a sip of horchata is testament to that. Food writer Andrew Coppolino lives in Rockland. In a climate where aggression is on the rise in politics, it is imperative to respect the feelings and experiences of those who are subjected to such behavior. Maintaining high standards of respect and decorum is essential for effective governance, benefiting everyone in our community,” Mayor Lajoie stated. “There are procedures in place to ensure everyone has the right to speak, and there is no justification for anyone to shout during council meetings.” She calls the behaviour presented by the councillor as “unacceptable on our council as long as I am mayor.” Mayor Lajoie goes on to say that she will work towards finding effective solutions to maintain order even in challenging situations. She states that although she respects the Integrity Commissioner’s process, she believes that resolving issues internally, when possible, will foster a more collaborative and trusting environment and would have preferred the opportunity to resolve this internally before it escalated. For the second part of the complaint, al- though she was not found to have breached the Code of Conduct, Mayor Lajoie acknowledges her right to freedom of speech regarding my social media posts she will continue to “use my voice to hold myself and the council accoun- table” and to communicate with residents of Casselman. Mayor Lajoie is inviting residents to the $BTTFMNBODJUZIBMMPO8FEOFTEBZ +VMZ at 6 p.m. to give the public the opportunity to ask questions, voice concerns, and engage directly with her. “I believe in the power of open dialogue and am committed to rebuilding trust within our community,” she stated.
It was acknowledged that it is natural lear- ning curve for a new mayor, but a “zealous pursuit of the rules and proper procedure along with a deficient understanding of such proce- dure has become a problematic combination.” For that reason, it was recommended that Council require the Mayor develop a training and education plan for municipal operations, council conduct, and chairing meetings. The mayor should commence any courses or training within six months of July 9, when the report was made public. The second part of the complaint was concerning social media posts made by the Mayor which provided highlights for of Council meetings. The complaint alleged that some of the posts contained false information, failed to uphold respect for Council decision making, and pre-empted proper announcements by staff. The complaint was dismissed since the Mayor’s posts did not breach the Code of Conduct. The Mayor’s Statement 0O 8FEOFTEBZ +VMZ .BZPS -BKPJF addressed the Integrity Commissioner’s Report on her Facebook account. Regarding the first part of the complaint, she states she will pursue education in local governance through Dalhousie University, as well as training through Leadership Féminin Prescott-Russell’s CAPP program. “This commitment to continuous impro- vement reflects my dedication to serving Casselman with excellence,” she wrote in the statement. Lajoie adds that during the closed session on May 7, the councillor in question stood VQBOESBJTFEUIFJSWPJDFBUIFS&WFOXJUI repeated and calm requests for them to stop, the behavior continued, according to Lajoie. i8IJMFUIFDPVODJMNBZOPUIBWFQFSDFJWFE
Mayor Lajoie to pursue education in local governance following an Integrity Commissioner’s report found the Casselman mayor violated the municipal Code of Conduct and failed to follow proper council meeting procedures. Due to the cancellation of Casselman’s Council meeting on July 9, the Integrity Commis- sioner’s report was not presented by was still made public along with the agenda of the day. The report states that on May 22, 2024, the Integrity Commissioner received a complaint against Mayor Lajoie which was made in two parts. The first part of the complaint stated that Mayor Lajoie violated the Code of Conduct during a closed session of Council held on May 7 where she insinuated wrongdoing on the part of a fellow member of Council. The member of Council attempted to correct the record and asked that the mayor retract her statement, Mayor Lajoie instead ejected the Member from the meeting. The report states that Section 5 of the Code of Conduct was breached when she “failed to follow proper procedures”, but not for the comments made. Although the Lajoie’s actions breached the Code, the report states that it was not done in a way that was motivated by malice and that she made “commendable efforts to fulfill her role and abide by all requirements of the Code and the Act.” The report indicates that the root of the inci- dent is a lack of knowledge of procedure, which also appears repeatedly in other examples provided in the investigation.

Climbing is a fun and exciting sport that requires focus and strength. Whether beginner or experienced, climbing is a great way to challenge yourself. Want to give it a try? There are plenty of options to choose from.
You can practice climbing both indoors and outdoors. Starting indoors is an excellent way to prepare for outdoor adventures, as the coloured holds show you where to go. Bouldering gyms also offer a welcoming and encouraging environment. When climbing outside, you can enjoy stunning views while connecting with nature. However, you must deal with changing weather conditions, such as hot rocks in summer or slippery surfaces when it’s humid. There are various climbing techniques you can practice. Bouldering requires no ropes or harnesses and can be done alone in a gym. If you prefer sport climbing, start with top roping, where the rope is attached to
the top of the wall to prevent falls. Traditional climbing requires more experience because there are no fixed markers. This could be the most appealing option if you believe in leaving no trace.
If you’re new to climbing, it’s a good idea to take a few lessons to learn the basics and familiarize yourself with the terminology.

Ne cherchez plus : organisez un méchoui! Voici tout ce qu’il faut savoir pour faire de votre projet gourmand un succès (et pour rendre les voisins jaloux!). Réunir les bons outils Puisque vous ferez rôtir un animal entier, il est indispensable d’utiliser du matériel adapté à un tel poids. Plusieurs entreprises offrent des services de location : une recherche rapide sur le Web vous permettra de trouver des ensembles de cuves métalliques et de tournebroches à prix raisonnables. Choisir la viande Si le méchoui est traditionnellement constitué d’un agneau ou d’un mouton, vous pouvez très bien opter pour le porc, le porcelet, le sanglier ou même la chèvre! En achetant la viande chez un artisan- boucher ou directement chez l’éleveur, vous vous assurerez de sa qualité. Conseil de pro : calculez entre 300 et 400 g par personne invitée. Il ne reste qu’à décrocher le délicieux repas (la broche sera évidemment très chaude) et à trancher la viande. Running in summer: take these precautions when it’s (too!) hot

THIS REFRESHING SALAD IS DELICIOUS AND HEALTHY. WHY NOT ENJOY IT WITH FRIENDS ON YOUR PATIO OR IN THE PARK? Ingredients (Servings: 2) • 1/4 cup pearl barley • 1 pomegranate
Exercising outdoors during summer is great. However, during a heatwave, you risk dehydration, sunstroke and more. Follow these tips for a safe run. Adapt your running habits It can be hard on your body to run during a heatwave. Remember that your performance can be affected, so lower your expectations and stay within your limits. Instead, try shorter intervals with moderate intensity. Also, run early in the morning or evening when the sun isn’t at its peak. Hydrate regularly Ensure you drink plenty of water before, during and after your run. If you run for over an hour, drink a sports drink to replace lost electrolytes and salts. Dress appropriately Lightweight, breathable workout clothing is designed to wick away moisture and
prevent chafing. Complete your outfit with sunglasses and a baseball hat or visor. Don’t forget the sunscreen! Look for shade Avoid running on blacktop and cement. In- stead, run in green spaces like tree-lined sidewalks, parks and riverbanks. In sweltering weather, you could also opt for a trail run, where the trees shade you from the sun. Finally, listen to your body. Nausea, head- aches and dizziness are all signs that it’s time to stop. If there’s an extreme heat warning, heed the recommendations of the authorities and exercise caution. After all, your health is at stake!
• 4 cups arugula or spring mix • 1 cup cooked chicken breast, roughly diced • 1 orange, peeled and cut into thin slices • 1 tablespoon crushed toasted almonds (for garnish)
If you don’t eat meat, replace the chicken with another plant protein of your choice!
Directions 1. In a small saucepan, simmer the barley for 25 minutes or until tender. Drain and set aside to let cool. 2. Cut open the pomegranate and remove the seeds. Watch an online tutorial if necessary. Set aside. 3. whisk together the ingredients for the dressing in a small bowl. Season to taste and set aside. 4. In a large dish or salad bowl, gently toss the lettuce, chicken, orange slices, barley and pomegranate seeds. 5. Add the dressing and serve in salad bowls. Garnish with crushed almonds.

Lafontaine continuera également à superviser le déve- loppement des gardiens de but, ce qu’il a fait au cours des deux dernières années. M. Lafontaine a déclaré que son objectif pour la saison à venir est de s’assurer que les Vikings ont l’une des meilleures défenses de la ligue en soutenant les défenseurs et en s’assurant qu’ils mettent au point leur jeu défensif avant de se concentrer sur l’offensive. De plus, M. Lafontaine a indiqué qu’à chaque entraînement, 20 à 30 minutes seront consacrées aux gardiens de but, réitérant l’importance de prendre ce temps et de se concentrer uniquement sur eux. Le dernier ajout à l’équipe, Alex Schulz, a été nommé entraîneur officiel pour la saison

Ménard est le nouveau vice-président des opérations et assistera le président Sylvain Dignard dans l’administration de l’équipe. « C’était un rôle que je voulais vraiment conserver au sein de l’organisation, a déclaré M. Ménard. C’est une très bonne organisa- tion, toujours gagnante et avec laquelle il est toujours agréable de travailler. » Il s’est joint à l’organisation à titre d’en- traîneur adjoint lors de l’année inaugurale en 2008-2009 jusqu’en 2012, puis est revenu
