ZACH IS READY, BUT ARE WE? How College Life Has Changed Over the Years
June is a jam-packed month not only for our son Zach but also for his mom and me, who are helping him prepare for college. With enrolling in classes, freshman orientation, and dorm room shopping, I can only think about how much college has changed since I went to school. Aside from getting him ready for higher education, we also need to teach him a few things before he lives independently.

In my days at Western Illinois University, the room was so small that my roommate and I could both be in our own beds and give each other a high five. You don’t even want to know about the mayhem of sharing a single bathroom with over 20 other college boys. It’s comforting to know that Zach won’t have to elbow anyone just to get to the shower first.
chapter. College is more than just an education. It teaches you life skills and how to be independent (with a safety net, of course). When it comes down to it, he’ll learn how to take care of himself and even cook a decent meal without a microwave. He’ll grow into an adult in the blink of an eye, and my wife and I will be looking for ways to help him when he can’t do it all by himself. Do I sound sentimental? Well, that’s because I am! While I talk about helping Zach prepare for moving out, the truth is that it’ll be much harder on us than on him. Thankfully, he’ll only be two hours away. Now imagine how we’d be if Zach were moving across the country! Overall, we’re thrilled to see what he accomplishes in the years to come. Don’t get me wrong — Zach is one of the most independent teens I’ve ever seen, and I’m not too worried. He’s constantly on the move and doing his own thing, which is actually how he’s always been! Yet, when it

Goat Cheese and Thyme Stuffed Chicken
INGREDIENTS • 2 skinless, boneless chicken breasts • 3.5 oz firm goat cheese • 1 tsp fresh thyme leaves, plus 2–3 sprigs • 4 pieces of thin-sliced bacon • Olive oil
• 2 zucchinis, thinly sliced • 1 large tomato, thinly sliced
DIRECTIONS 1. Preheat oven to 375 F. 2. Split the chicken breasts almost in half along the long side, open them like a book, then flatten the sides out. 3. Put the goat cheese on the “open book” side of the chicken and sprinkle with thyme leaves. Fold the chicken over to enclose the cheese, then wrap each breast in 2 slices of bacon. 4. Lightly oil a shallow gratin or casserole dish, then arrange overlapping rows of zucchini and tomatoes on the bottom. Drizzle with olive oil, sprinkle with salt and pepper, then set chicken on top. Place thyme sprigs on chicken. 5. Bake for 40–45 minutes until the bacon is crisp and golden and the zucchini is tender.
