Ingredients - per person 1 Salmon fillet 1 tsp sweet chilli Salmon is a great source of omega-3 fatty acids, a type of heart-healthy fat that can decrease inflammation and support brain health. It also tastes delicious, and with my Asian-inspired flavours it tastes even more delicious.

This recipie can easily be cooked in the oven, a frying pan or even adapted to slow cooker times as this cooks in under 10 minutes! I have chosen egg-fried rice for the added protein hit but any rice or boiled potatos will taste just as nice.

*Lazy Ginger/ Lazy Garlic are a great alternative if fresh isn't available.

Method STEP 1

Preheat your oven to 180C/160C fan/gas 4 - air fryer preheat 160C. Boil the rice according to pack instructions. Put the salmon in a small tray to fit in your oven/ air fryer (line with foil for easy clean). Mix 1 tbsp soy sauce, sweet chilli, ginger, garlic, sqeeze of lime and a touch of black pepper into a small dish, pour over the salmon. STEP 2 Bake in the oven for around 15 minutes, or in the air fryer 8-10 minutes. STEP 3 Make egg fried rice - in a wok or frying pan, heat on medium and add a little oil, crack in an egg and mix until scrambled and cooked. Add your rice, peas, 1tbsp soy sauce, Chinese 5 spice and a touch of black pepper. Fry for a few minutes to heat through. Boil/steam your vegetables. Serve your salmon with the fried rice and veg.
