ACCEPTED, ENROLLED, AND COLLEGE-BOUND Our Son Chose His University!

Our family has some big news. Our oldest son, Zach, has officially decided on his university! If you’ve been reading our newsletter, you know our Zach is just about ready to leave the nest. The reality hits even harder now that he’s made his final decision and his departure date comes closer. Fortunately for us, Zach has decided to stay closer to home (after a brief scare of his interest in Colorado and Pennsylvania). He received acceptance letters from various colleges and had a tough choice to make. Unlike my wife and I, who simply went to the first university that accepted us, Zach wanted to make sure he chose a school right for him. How we created such a mindful child, I’ll never know! Zach had a few stipulations when it came to the right school. These requirements included a smaller size, a mechanical engineering program, and a theater program “As this new phase begins, we cherish each moment and remember that Zach will always be part of our home, no matter where he goes.”

where he could strengthen his talents. The result? St. Ambrose University! It’s a Catholic university that will align with his faith and meet his academic requirements. Ambrose is a promising institution that Zach will call home for the next four years. Located in Davenport, Iowa, St. Ambrose University has only 2,299 undergraduate students and is even smaller than his high school. At Ambrose, graduates have also found successful careers at major companies like ExxonMobil, Accenture, and more. Feats like this have made Zach even more excited to start this new chapter in his life. Of course, Zach could never leave behind his deep love for acting on the stage. While studying mechanical engineering, he also wanted the freedom to perform. Minoring in theater arts was crucial, and lucky for us, St. Ambrose is home to an award- winning theater program. I remember when Zach first fell in love with theater, all the way back when he was in the fifth grade. Huntley High School was looking for Michael Banks to star in their “Mary Poppins” production, and Zach asked if he could audition. I certainly didn’t think much of it

and took him to the audition. Little did I know he’d be surrounded by kids with actual acting resumes. While I was slightly intimidated, Zach wasn’t discouraged one bit. I may be biased, but I knew he knocked his audition out of the park. Sure enough, he got the role, and he’s been hooked ever since. Memories like this one have been shared back and forth between my wife and me as we reminisce. I won’t lie, we’re all feeling sentimental about Zach leaving for college. We can’t stop pointing out all the “last” things we do with him and how an era is indeed ending. But really, instead of an ending, this is a new beginning for Zach and our family. We’re more than ready to see him pursue what he loves most in an environment where he can embrace his passions. As this new phase begins, we cherish each moment and remember that Zach will always be part of our home, no matter where he goes. We’re fortunate enough to be able to attend his future performances and easily have him here on the holidays. Whatever changes come our way, we’ll always face them together. –Mike Ulmer

Roasted Sweet Potato Arugula Salad

Enjoy this salad’s warming cinnamon and crisp bites of radish and arugula.

INGREDIENTS • 3 medium sweet potatoes, cubed • 1 tsp smoked paprika • 1/2 tsp turmeric • 1/2 tsp cumin • 1/2 tsp cinnamon • Salt and pepper, to taste • 1 red onion, thinly sliced

• 1 bell pepper, thinly sliced • 3 small radishes, thinly sliced • 2 cups arugula, thinly sliced • 1 1/2 cups cooked lima beans, drained and rinsed • Balsamic salad dressing of choice

DIRECTIONS 1. Preheat oven to 350 F. Line baking sheet with parchment paper. 2. In a bowl, toss sweet potato cubes with smoked paprika, turmeric, cumin, cinnamon, salt, and pepper. Transfer to prepared baking sheet and arrange in a single layer. 3. Roast for 25–30 minutes until sweet potatoes are nicely browned and fork-tender. 4. In a large salad bowl, combine onion, bell pepper, radishes, arugula, and lima beans. 5. Toss the salad with dressing, then top with roasted sweet potatoes.
