Fresh truffles
We pick the finest wild truffles from our local area and ship them throughout Italy and around the world. These precious woodland treasures are handled with the utmost care to ensure they reach the kitchens of the greatest restaurants as if they have just been picked.
How to store fresh truffle Since truffles are made up of around 80% water, in order to slow down their activity it is recommended to store them at a controlled temperature of +2°C/+4°C, ideally in a ventilated refrigerator. Rice is not suitable as a storage method because the starch rapidly removes the truffle’s moisture, completely drying it out.
It is therefore advisable to use paper towels to wrap or display it.
It is important to ensure that the paper is always dry so that it can trap and absorb moisture from the truffle, preventing the formation of mould.
A cotton cloth can be used as an alternative to a paper towel.
In order to reduce weight loss, it is recommended to close it inside an airtight container or cover it with a glass bell, while always keeping it in the refrigerator. Truffles’ shelf life greatly depends on the type (the “black” family are more resistant than the white and bianchetto truffles), weight and seasonality. How to recognize a good truffle
A truffle must have 3 characteristics to be defined of good quality:
Perfume: truffle’s rich, well-balanced aroma varies according to the species. If a truffle lacks fragrance, it is not a defect, but a result of insufficient maturation of the carpophore. Compactness: it should feel solid, but not rubbery. Colour: bright and vibrant.
Gourmet pizza & Truffle Acacia Honey The sweet, aromatic notes of Truffle Acacia Honey add flavour and elegance to one of Italian cuisine’s most beloved dishes.
Divide dough mass into 4 equal balls.
Gently spread each ball on a 20 cm diameter pizza baking pan.
Allow to rest for 20 minutes in a warm place.
Bake in a hot oven at 180°C for 12 minutes.
Meanwhile, dice mozzarella and let it to dry on paper towel.
Spread mozzarella dices on the partly-baked pizza, add small chunks of gorgonzola cheese and pancetta slices.
Return the partly-baked pizza into the oven and bake at 200°C for 4-5 minutes.
Finish off with a drizzle of truffle honey, a twist of pepper and some fresh thyme and rosemary leaves.

Katse Fish Farms is based in the upper 14km’s of the Katse Dam – stretching from the Malibiamatso River inlet, to the water abstraction tower that feeds water from the Katse reservoir to the Ash River in South Africa. Due to its positioning, we have good water movement throughout our farming area.
Water is one of Lesotho’s largest exports and is therefore extremely well preserved. The water temperature is good for trout farming for most of the year , due to the high altitude (2200m above sea level).
