Crowds pack Ruka —a sexy Peruvian-Asian “restobar” in down- town Boston—to flirt the night away over rounds of this low-ABV twist on a Tom Collins–style highball. “When creating this cocktail, the goal was something light and refreshing that highlights some great Nikkei flavors. In this iteration, we replace the gin with a split base of plum wine and yuzu sake. Lemon and soda water round this drink out, creating a floral and citrusy cocktail that is both refreshing” and light enough for a second round, says Ray Tremblay, beverage director, COJE Management Group. “Being in the Theater District, we wanted people to be able to enjoy a deliciously balanced cocktail or two and still be able to enjoy a two-hour show.”

The ever-growing assortment of low-alcohol cocktails lean on lower-alcohol bases rather than boozy, full- proof spirits. This allows the imbiber to make a night of it without feeling the effects of full-strength drinks. So if you’re looking for the sweet spot between a cocktail and a mocktail, seek out a fun and innovative creation that’s suitable for sipping at any given time, whether it’s brunch, happy hour, or after-dinner drinks. Mansion Global Experience Luxury consulted with mixologists from some of the world’s top drinking establishments to learn how to make their favorite low-alcohol cocktails perfect for lighter sipping.

Over medium heat, stir until sugar is dissolved. Let cool, strain, and bottle the liquid. Refrigerate until cool.
