Pasta with Chicken and Bacon by Adriana da Silva Simplicio From TP in Brazil
INGREDIENTS
HOW TO PREPARE
• 1 onion, diced • 3 garlic cloves, minced • 400 grams chicken breast, diced • 300 grams bacon, diced • 750 ml tomato sauce (homemade or store-bought) • 200 grams pasta • Vegetables or grated Parmesan cheese for garnishing (such as oregano, parsley, or basil)
01. Dice the onion and mince the garlic. 02. Dice the chicken breast and bacon into small pieces. 03. In a large skillet or frying pan over medium heat, fry the bacon pieces until they’re crispy. 04. Use a slotted spoon to remove the bacon from the pan, and set it aside on a plate lined with paper towels to absorb excess grease. Leave the bacon fat in the pan for added flavor. 05. In the same pan with the reserved bacon fat, add the minced garlic and diced onion. Sauté over medium heat until the onion is soft and translucent, about 3-4 minutes. 06. Add the diced chicken breast to the pan, seasoning with salt, pepper, and any other seasonings of your choice (such as paprika or Italian herbs). 07. Cook the chicken, stirring occasionally, until it is golden brown on all sides and cooked through. 08. Pour in the tomato sauce and bring to a simmer. Reduce the heat to low and let the sauce cook for about 10 minutes, allowing the flavors to meld. Stir occasionally. 09. While the sauce is simmering, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside. 10. Add the cooked pasta and reserved bacon into the skillet with the chicken and tomato sauce. Toss everything together until the pasta is well-coated with the sauce. 11. Sprinkle with grated Parmesan cheese and add herbs such as oregano or parsley if desired. Serve hot, and enjoy your pasta with chicken and bacon!
