INGREDIENTS

HOW TO PREPARE

• 1 Iberian pork ribs • ½ green bell pepper • 1 medium tomato • ½ large onion • 500 ml beef broth • 250 ml white wine • ¾ cup rice • Salt and saffron to taste

01. Start by chopping the ribs and vegetables while heating the frying pan or paella pan. 02. Once the paella pan is hot, add the ribs over medium- high heat to sear them. 03. When the ribs are browned and slightly cooked on the inside, add the vegetables and cook over medium heat. 04. Add a little salt to help the vegetables release their moisture. 05. When the vegetables are soft and sautéed, add the white wine and increase the heat to evaporate the alcohol. Once evaporated, add the rice so it can absorb the flavor of the sauté. 06. After a couple of minutes, add the beef broth and bring it to a boil. Once it starts boiling, reduce to medium heat and cover. 07. Check occasionally to see if more broth needs to be added and taste for seasoning, adding salt and saffron to taste. 08. Serve and enjoy a delicious rice dish!
