TURNING UP THE HEAT RSI is experienced in commercial kitchen construction, Goo says, and has previously installed kitchen equipment in restaurants, commercial kitchens and major grocery chains. But RSI had never worked with food packaging and processing equipment, which is complex and strictly regulated. RSI studied many different pieces of equipment, coordinating with other project team members so equip- ment would function as intended after installation. “The amount of coordination of MEPs for the kitchen, food processing and packaging equipment was daunt- ing,” Goo recalls. “The contractor is responsible for the layout and the loca- tion of these things. For the designer, they’re trying to make sure that [they’ve got the] right connections, the right plumbing and right HVAC … and they’re trying to communicate that in their drawings. “At the same time, we’re trying to
interpret that and make sure that we have that all figured [out],” he says. “And of course, the actual equipment that we’re providing and installing has its own shop drawings and prod- uct data that we want to double-check with the architect and designer to make sure that all of that rough-in is sized correctly and in the right location.” Tech resources provided some guid- ance, “but a lot of it is just boots on the ground, the guys actually doing it, sitting together and double-checking plans and comparing them to the shop drawings and to the catalogue,” Goo explains. “And then going back and making sure that where they did install it is in fact correct. Leeward Community College had an existing warehouse with a solid framework ready to renovate.
