POKE BOWL

INGREDIENTS FOR 2 PEOPLE 200g of sushi rice, 2 tbsp of rice vinegar, 10g of white sugar, sesame oil, 1 tbs soy sauce, lemon juice, 1 tomato, ½ cucumber, 1 carrot, 100g edamame (found in frozen section) or broad beans, 100g of tofu, cornmeal (maizena) - optional, 1 avocado, 100g of bean sprouts, 100g of fresh red tuna/ sushi-grade tuna (or prawns), sesame seeds, wasabi, pickled ginger, kikkoman sauce.

PREPARE THE SUSHI-RICE: • Bring water to boil in a pan. Add salt.

• Sauté the bean sprouts in oil. • Boil edamame in salted water for 3-5 minutes. • Set vegetables aside. PREPARE THE TOFU: • Cut tofu in small cubes and coat them in cornmeal. Fry in sunflower oil. Add salt and pepper. BRING IT ALL TOGETHER! • In a big bowl, add the rice, the vegetables, the tuna and the fried tofu. • Add slices of pickled ginger and a teaspoon of wasabi.

• Add rinsed sushi rice to boiling water, and cook for 15-20minutes. Drain the rice and put aside. • On low heat in a pan, dissolve sugar in rice vinegar. Pour over cooked rice andmix. FRESH TUNA MARINADE: • Dice the tuna. • Mix the lemon juice, a few drops of sesame oil and one teaspoon of soy sauce in a bowl. • Marinade the tuna and set aside. PREPARE THE VEGETABLES: • Cut avocado into thin slices. Squeeze lemon juice on top (to avoid avocado frombrowning).

• Garnish with sesame seeds. • Serve with kikkoman sauce.

• Slice the tomato and cucumber. • Use a peeler to cut the carrots into tagliatelle-like ribbons.
