FALL 2025 Issue 26

Sparta Lavender Finds a Temporary Home at the Tearoom When road construction threatened to close off access to her business this fall, Sparta’s Lavender Farm owner, Karen Parr, was faced with a difficult question: how to keep her shop open while the bridge leading to her farm was being repaired. “I went to one of the county meetings in the spring and asked if there was going to be any bridge work this year,” Karen recalls. “They told me there was, and I begged them not to do it in the summer because that would hurt our business terribly. Then, in September, I got tagged in a Facebook post saying it was going to close in October.” The bridge closure meant customers would have to take a lengthy detour to reach the farm, something Karen knew would affect fall and holiday sales. “We usually stay open right up until Christmas,” she says, “So I thought, what on earth are we going to do?”

It works both ways.” Both women are already pondering future festive collaborations. “We could bring back lavender scones or add lavender-inspired specials,” says Karen. “It just makes good sense.” Her answer came in the form of community spirit and a friend with space to spare. Norma Roberts, owner of the Sparta House Tearoom, didn’t hesitate when Karen came looking for a temporary home. “I drove down here and explained the situation,” says Karen. “I don’t think I even got the sentence finished before Norma said, ‘Come and use this space’.” For Norma, the offer made perfect sense. “At this time of year, I don’t normally need this room,” she says. “So, it worked out really well — helping out a friend. Being a small village, we like to see if we can help one another.” In late September, the new location inside the tearoom at 46342 Sparta Line opened and has already been a hit with customers. “People have wandered in from the tearoom and said, ‘I didn’t know the lavender farm was still open’!” says Karen. “It’s already been really valuable.”

Home Front of Elgin: Remembering Rural Ontario’s War Effort On Remembrance Day, we often reflect on the soldiers overseas, but the spirit of sacrifice was alive in every corner of Ontario, especially in its rural counties. Right here in Elgin County, farmsteads, kitchen tables, and village halls were all battlegrounds of a different kind, the fight to support those overseas. When war was declared, many young men from Elgin’s villages and farm families enlisted, leaving behind parents and siblings to carry on. The fields still needed ploughing; livestock needed care, and harvests, bringing in. In response, women and youths took up roles once reserved for men, driving farm machinery, repairing fences, milking cows, and managing the crops. Across Ontario, programs like the Ontario Farm Service Force (often called ‘Farmerettes’) recruited young women to fill gaps on farms. Civilians at home joined rationing campaigns, purchased Victory Bonds, and organized fundraising drives. Local Red Cross branches in Elgin sewed quilts and assembled care packages to send to troops abroad. Homemakers economized in their daily lives, stretching sugar, substituting ingredients, and growing Victory Gardens using every inch of available land on their homesteads. Rural communities rallied around displays promoting wartime causes: businesses and local government displayed Victory Bond posters and staffed information booths to drive awareness and contributions. Small-town stores adjusted window displays to reflect patriotic themes, and local fairs and 4-H clubs became hubs for scrap-metal drives, knitted socks, and fundraising teas. Elgin’s countryside also became directly tied to the war through the establishment of No. 4 Bombing and Gunnery School in Southwold Township, part of the British Commonwealth Air Training Plan. The base trained aircrew from across the Commonwealth in bombing and gunnery techniques, filling the skies over Elgin with the steady hum of practice flights. Local farmers often found their fields used as landmarks or emergency landing sites, and the presence of the base brought both excitement and tragedy, most notably the 1943 crash of a training aircraft that claimed several lives. By war’s end, Elgin County’s rural families had tested their resilience in unfamiliar roles. The contributions made from farmsteads and small communities: farming under strain;

sewing for soldiers; raising funds, and hosting training, were indispensable threads in Canada’s war effort. On Remembrance Day, as we honour those who fought abroad, let us also honour the quiet courage of those who made war efforts possible from home, in fields, barns, and kitchens across Elgin County.

The Municipality of Central Elgin proudly honours and remembers the sacrifice of our Veterans and all those who continue to serve our country. Lest We Forget.

We remember those who sacrificed for our freedom Lest We Forget NOVEMBER 11

Discover the Magic of West Elgin on the Country Holiday Tour The holiday season in West Elgin is about to get a little brighter as the community gears up for the 6th Annual Country Holiday Tour, taking place November 7th, 8th, and 9th, from 10 am to 4 pm each day. Coordinated by Pam Wardell, owner of Dogwood Creek Lifestyles, the event has grown into a much-loved tradition celebrating the creativity and spirit of local entrepreneurs. This year’s tour features 16 businesses across these 10 stops, including: Natterjack Brewing Company Ltd.; Bluegroves Farms; Talbot Trails Restaurant; Tranquil Earth Studio; Cosmic Oasis; Dogwood Creek Lifestyles; The Wild Goat Coffee Company; Rodney Wool Shoppe Gifts & Tea, and Erie Gardens Market & Floral Studio. Visitors can start at any of these locations and pick up their tour map to plan their festive shopping route. “The inspiration of the Country Holiday Tour is to bring tourism to West Elgin,” says Pam. “It’s a wonderful opportunity to showcase the small businesses in our municipality and for small business owners to work together. Each business is unique and has its own story to share with visitors.” What began in 2020 has blossomed into a three-day celebration of community, craftsmanship, and connection. “Yes, the vendors are at those locations only for the tour,” Pam explains. “It’s a great way for visitors to explore new products and meet even more talented local makers.” New to the tour this year are three standout additions. “Cosmic Oasis and Tranquil Earth Studio are two new businesses in West Elgin owned and operated by women,” notes Pam. “Cosmic Oasis is a metaphysical space in West Lorne offering supplies,

tools, psychic readings, and workshops for self-development, emotional healing, and mindfulness. Tranquil Earth Studio is a lovely boutique space to embrace the essence of nature through pure, clean, simple products for you and your home.” She adds that Iron-Man Welding Services will also join the lineup this year, showcasing metal artwork and digital creations. Pam encourages everyone to take part and discover the small- town magic that makes West Elgin shine. “I wholeheartedly recommend the Country Holiday Tour—a delightful way to experience the charm and energy of our small but vibrant community. Along the way, you’ll meet the passionate small business owners who help drive West Elgin’s economic growth, and you’ll hear the inspiring stories behind their shops.” Follow @westelgincountrytours on Instagram for updates, sneak peeks, and a look at the businesses taking part in this year’s tour.

Get Your Gear: Ghost Hollow Tack Shop and Western Boots by Peri Hayes If you are on the hunt for an array of Western wear and resources, Ghost Hollow Tack Shop and Western Boots is the store to explore. Brian Robinson has spent four decades in business, launching Ghost Hollow in 1983 and operating throughout the years in Brownsville, Lyons and St. Thomas before moving his local establishment to Aylmer last year. Brian voices his appreciation for their customers, and the steady traffic in their present location. Narrating how his business came to be, Brian details the time when he had bought his Paint Horse from the States with experience in the advertisement industry. Along his drive, Brian’s stallion was spotted on a Halloween billboard carrying a ghost on his back. Arriving home that evening, Brian observed the eerie fog surrounding his property. He proceeded to notice that the lights in his hollow-situated barn were turned on. This curious experience, paired with Brian’s impactful conversation with a salesman, symbolically led to the development of Ghost Hollow. With belts, blankets, buckles, halters, hats, helmets, saddles and beyond, your abundant choice of Western riding equipment is available to discover at Ghost Hollow. As Brian details, they have expanded their boot selection with over 2,000 options for selecting your most suitable fit. While serving locally, Brian also ships his products to business owners based in Alberta, Ohio and more. This family-owned and operated dedicated team of three includes Brian’s son, Cody, who expresses, “I enjoy introducing our business to new people, and working in this environment. I like spreading knowledge about the horse industry.” To this, Brian adds, “I like helping people, and I like being around horses.” Ice and Lounge Rentals Available

Vienna’s Otter Creek Distilling by Peri Hayes

Opening for business this autumn, Otter Creek Distilling is spearheaded by Tami Emerson, Tim Emerson and Murray Williams. Located at 92 Edison Drive, this team of three aims to cultivate a connective experience for their guests, introducing an era of history through a selection of unique cocktails. As General Manager, Tim is responsible for the aging and flavouring of their spirits: “Distilling is a creative process with quite a learning curve -- all very intellectually stimulating. I like the challenges of starting a new business and brand development. I also like the history that is woven through our distillery.” Head Distiller, Murray, declares, “It doesn’t feel like work. I enjoy it, and I want everyone else to enjoy it too.” Their personal connection to the Prohibition involves Murray’s Moonshiner relatives and Tim’s great-grandfather having been a Rum Runner. Murray, dedicated to grinding their fresh rye and more, describes, “This is our labour of love, as we come together to bring back the history and capture this time period. The culture of the Underground Railroad and the 50,000 gallons of spirits produced in Vienna from 1851 - 1991 is part of the history that we want to recognize.” The Otter Creek was significant for Vienna’s trade and overall prosperity throughout the 1800s, with ‘It’s in the water’ labelled on the back of their bottles due to the evidently fresh crispness. Located inside of the historic Vienna-based barn, their cozy speakeasy setting warmly welcomes guests to explore their choice of four or eight quarter shots while Mixologist

and Historian, Tami, shares the local lore. With The Aylmer Express, Tami is currently in the process of publishing her book, which focuses on the Prohibition era, themed cocktails and more. Tami expresses her motivation, candidly voicing, “I want to capture the infamous more than the famous -- those who established this area, the pioneers and the immigrants. I see the forgotten people.” Tami was once a bartender before pursuing her career as a Dental Hygienist. In her role at Otter Creek, Tami assures, “I listen before selecting the cocktail for each guest’s palette.” Being where paw-paw originated, this team has continued to nourish their grove on the farm. Tami has incorporated this

plant into crafting her Paw-Paw Rum Colada. Their Prohibition era products include moonshine, rye, rum and southern spirit, with their tip of the hat to bourbon. Aside from this core, they offer the following: an old and spectacular dry gin recipe as their “best seller”; six times distilled vodka; a spiced rum recipe from the Caribbean; and more. Their vodka-based cocktails are not limited to blue raspberry and dill pickle, along with seasonal beverages such as their current pumpkin spice mixture. Tami further highlights their limited North Star Rum, meaningfully influenced by the hidden quilt signs found along the barn during the Underground Railroad -- which translate to “Follow the North Star to Canada.” Murray emphasizes, “We try not to waste, with our spent grains fed to the cows. We strive for a minimal carbon footprint.” To this, Tami proceeds, “We have a passion for sustainability. This was formerly a tobacco farm, which has been diversified into a vegetable, cash crop and cow-calf operation.” Outdoor space on this 250-acre property can be utilized for barbecuing and an array of activities. As well, guests may bring their own kayak to adventure part of the renowned ‘Big Creek’. Tami enthuses, “We love the collaboration in St. Thomas!” Thus far, they celebrate their gin being recently served at Bridges to Better Business. Moreover, Big Dog Smokey Hot Sauce has included Otter Creek Distilling’s bourbon in one of their recipes. Meanwhile, featuring their vanilla, rum, and spiced rum in respective flavours, Otter Creek has several delectable Decent Ice Cream options on-site. With great delight, Otter Creek Distilling intends to participate in the St. Thomas Horton Farmers’ Market next year.

Visit the ottercreekdistilling.ca website for further information, as well as their social media profiles for Tami’s video tutorials. Tami, Tim and Murray look forward to growing their community, operating Otter Creek Distilling Thursday through Saturday from 11:00 am until 7:00 pm and Sunday from 11:00 am until 3:00 pm. For special events, guests are welcome to book in advance. With purchase of their bottled products, free local delivery is offered as far as Port Dover in the east and St. Thomas in the west.

Maximum Diesel: Honouring their Trade by Peri Hayes

Sarah and Justin Smout celebrate their evolving business, Maximum Diesel. With Justin operating the shop, Sarah is their Office Manager -- for which she facilitates an array of behind- the-scenes administrative work in regard to accounting, billing, parts and pick up. This team of two explores their first time in business together, having recently hired a third team member as part of their exciting expansion. Maximum Diesel began as a mobile repair service unit, repurposed from a firetruck which the pair purchased from the Malahide Township Auction. During this time, the pair were dedicated to working beyond their 9:00 to 5:00 careers. Sarah exclaims, “Our shop on wheels in our driveway started this business!” Justin has been a licensed 310T Diesel Technician for over 15 years, accumulating in-shop, administrator, foreman and service manager experience. Ultimately, Justin recognized his desire for further agency regarding his output of work and for nourishing his attention to detail. Moreover, Justin is passionate about offering customers reasonable prices for repair. In 2022, Sarah and Justin launched their mobile repair operation full-time, servicing Elgin County and surrounding area -- north to the 401, east to Tillsonburg, south to Lake Erie and west to Shedden. Maximum Diesel specializes in on-site repairs and maintenance of truck and coach, agricultural and construction equipment. Sarah voices, “We are an after-market repair facility, and can source after-market parts. There is so much reward in this

business and supporting the community. Our long-term goal is to become the leading after-market service provider in the region for both mobile and shop repairs.” With her background in health care, Sarah is committed to thorough customer care and ensuring that their team thrives. “The push for me was giving the opportunity for young tradespeople to have a hands-on education. This is ‘a dying industry’, and we want to be part of the solution to give young people a place to become licensed. We certainly have a pro-trade attitude, appreciating that the trades are the backbone of our community.” Sarah discusses their recent Bridges to Better Business recognition, as the 2025 recipient of the Starter Company Plus Award: “We are very honoured; this is heartfelt. I was overwhelmed with joy -- not just for myself, but for the fact that the trades were recognized. I feel this is an industry that gets overlooked. This is not just for Justin and I; this is for all tradespeople.” As Sarah concludes with gratitude and fulfillment, she emphasizes what excites her about their business: “The growth. When you become an entrepreneur and put yourself out there, receiving the response to your craft inspires you to do better. Recognizing the demand and having people believe in us has opened the door to turn our mobile unit into a shop for accomplishing in-depth repairs.” The Maximum Diesel establishment is now stationed at 10709 Hacienda Road, Unit F, Aylmer. The Aylmer-Malahide Museum’s Christmas Tour of Homes by Peri Hayes Larry Jeffery is the ongoing Advertising and Salesperson for the Aylmer-Malahide Museum’s Christmas Tour of Homes, enthusing, “This is the 21st year that the Tour has been held.” This seasonal event debuted in 2001, and with exception to COVID-19, has been facilitated every year since. As Larry proudly describes, “Each year, four unique houses are decorated for Christmas by our talented 12-person Decorating Committee.” This dedicated team has been preparing for several months, with this year’s Tour featuring three private family homes, one model home and the United Church adorned for the holidays. Afterward, participants are invited to the Museum — also recognized as the fifth location on the Tour — to enjoy door prizes and refreshments. Tickets for Christmas baskets will be purchasable during this time, as well as an opportunity to view their ‘From Farm to Factory’ exhibit. Alongside their guests, Larry looks forward to seeing the homes for the first time -- an eagerly awaited surprise. He shares, “The Tour has done very well the last two years, with about 700 people taking the Tour each year.” Revealing that hundreds of their attendees travel from out of town — and even out of province — Larry expresses his gratitude for the support, both local and beyond: “It helps put Aylmer on the map.” Aylmer-Malahide Museum’s Christmas Tour of Homes occurs on the third weekend of November. This year, the dates and times are as follows: Friday, November 14th, from 4:00 pm to 9:00 pm; Saturday, November 15th, from 1:00 pm to 9:00 pm; Sunday, November 16th, from 1:00 pm to 5:00 pm.

Tickets are available for $25.00, with free entry for guests under 12 years of age. Larry highlights that there are one dozen businesses selling tickets throughout Aylmer, in addition to Family Flowers and Lux Salon and Spa in St. Thomas. For those to the east, Tillsonburg Garden Gate is another carrier. “Of course,” Larry assures, “tickets can be purchased online through the Museum’s website, or by phoning the Museum at 519-773-9723.” Visit aylmermuseum.ca/tour-of-homes for further information about this luminous celebration.

If you’re looking to become more engaged with your community or gain hands-on experience in the agricultural community, consider reaching out to one of the groups above. Volunteers play a crucial role in cultivating a healthier, more resilient future for us all.

With the winter months upon us and final harvests and equipment repairs behind us, many farmers will now use this time for rest and reflection. But for a growing number of agriculture workers, the off-season continues to be an opportunity, not for slowing down, but for giving back. Rural communities often rely on a close-knit support network, and farmers are a central part of that fabric. Volunteering isn’t just good for the recipients -- it also helps farmers stay connected, active and mentally engaged throughout the year. The Elgin County Federation of Agriculture is a volunteer organization that lobbies to improve the economic and social well-being of farmers in the county, providing members with information on agricultural issues and increasing public awareness of agriculture and the food system. Aldred Maple Products Mary Webb Centre Cammy’s Natural Creations Bluegroves Farms It worries me that there seems to be a growing trend in our communities, both rural and urban, of not putting in the effort to get to know people. Let’s change that. You never know when you will need help getting your livestock off the road. Keep being outstanding in your field.

parents are separated. For some reason, I asked the child, “Do you have good neighbours at both houses?” The child was genuinely confused and responded, “We don’t know our neighbours.” Then I became confused. “What do you mean you don’t know your neighbours? I’ve seen both your houses, both of them almost touching, and you don’t know who lives next door?” My mind was blown, and if I’m honest, my heart was sad. Fast forward a few weeks: my husband had left first thing in the morning, and shortly after, the dog was barking. Not her normal, ‘there’s someone here’ bark, but a panic -- there is something wrong bark. I was still in bed, and admittedly annoyed that the dog had woken me up. I look out to see what was sending the dog round the bend. The horses were on the road!! Yep. There is nothing that makes you move faster than when you see your livestock on the road. If someone had caught what then played out on video, we could have been YouTube superstars! Who played a leading role in our viral-worthy horse-chasing escapades? Our neighbours. Our community of people who are there when you need them, no matter what you need them for. Did they question why their neighbour was running down the road in her pyjamas? No. They just showed up and had a few giggles afterwards! Our house may not be close enough to our neighbours’ to touch eaves troughs, but over the years we have built a relationship with our neighbours that time and time again has proven to be invaluable. In rural communities, there is a wide definition of neighbours. It isn’t necessarily the people who live right next door; it is people who live in your general area, and how fantastic is that? We know that the people who live a few concessions over are our neighbours and that we could call on them, and they on us.
