Vienna’s Otter Creek Distilling by Peri Hayes
Opening for business this autumn, Otter Creek Distilling is spearheaded by Tami Emerson, Tim Emerson and Murray Williams. Located at 92 Edison Drive, this team of three aims to cultivate a connective experience for their guests, introducing an era of history through a selection of unique cocktails. As General Manager, Tim is responsible for the aging and flavouring of their spirits: “Distilling is a creative process with quite a learning curve -- all very intellectually stimulating. I like the challenges of starting a new business and brand development. I also like the history that is woven through our distillery.” Head Distiller, Murray, declares, “It doesn’t feel like work. I enjoy it, and I want everyone else to enjoy it too.” Their personal connection to the Prohibition involves Murray’s Moonshiner relatives and Tim’s great-grandfather having been a Rum Runner. Murray, dedicated to grinding their fresh rye and more, describes, “This is our labour of love, as we come together to bring back the history and capture this time period. The culture of the Underground Railroad and the 50,000 gallons of spirits produced in Vienna from 1851 - 1991 is part of the history that we want to recognize.” The Otter Creek was significant for Vienna’s trade and overall prosperity throughout the 1800s, with ‘It’s in the water’ labelled on the back of their bottles due to the evidently fresh crispness. Located inside of the historic Vienna-based barn, their cozy speakeasy setting warmly welcomes guests to explore their choice of four or eight quarter shots while Mixologist
and Historian, Tami, shares the local lore. With The Aylmer Express, Tami is currently in the process of publishing her book, which focuses on the Prohibition era, themed cocktails and more. Tami expresses her motivation, candidly voicing, “I want to capture the infamous more than the famous -- those who established this area, the pioneers and the immigrants. I see the forgotten people.” Tami was once a bartender before pursuing her career as a Dental Hygienist. In her role at Otter Creek, Tami assures, “I listen before selecting the cocktail for each guest’s palette.” Being where paw-paw originated, this team has continued to nourish their grove on the farm. Tami has incorporated this
