1 1/2 cups plain yogurt or fat-free sour cream
1/4 cup Dijon mustard
6 sprigs fresh dill, chopped
2 14.75-oz cans salmon packed in water 4 celery stalks, finely chopped 1 large white onion, finely chopped

When Laura Grimm started Lolita’s Cupcreations in Tarpon Springs, she knew she was carrying on a family legacy. She named the bakery in memory of her mother, who passed away two years before the family immigrated to the U.S. from Lithuania in 1999. “She was always around the kitchen making some sort of pastry,” Laura says. “My whole family has always baked and cooked, so I’m very familiar with the kitchen area,” she adds. Her family members are also the ones who pushed her to start a business. “It all started with my kids being born,” Laura remembers. “I created a couple of cakes for their birthdays, and everyone kept saying, ‘Why don’t you do this for other people?’ I started making a few, and the next thing I knew, I was doing weddings and making very, very creative cakes.” Lolita’s Cupcreations operates out of Urban Grounds, a coffee shop Laura owns with her business partner and friend Annie. Laura bakes all the shop’s pastries, and Nicole Denmon notes you can find “probably the best cream puff you’ll ever have in life” in the display case. But Laura also does highly elaborate and custom cakes, which is her favorite part of the work. “Almost everything can be made edible,” Laura says. “Bringing people’s ideas to reality as a showpiece for their special event is heartwarming and why I love doing this.” Laura is known for her detailed work, saying, “That’s what pleases people the most. They come in with very particular ideas and want me to make them happen.” Laura’s kids are now almost 13 and 14, and she notes, “They’ve had a nice collection of beautiful cakes over the years.” Her husband is the one who came up with the word “cupcreations.” Laura’s family loves Florida and spends much of their time at the beach. “But during my me-time, I’m usually shopping,” she laughs. Though her kids have gotten older, children remain some of Laura’s favorite customers. “I love when kids see the custom cakes their parents ordered,” she says. “Whether they’re buying a celebration cake or pastries, I just love to make people happy and be part of their special occasions.” Lolita’s Cupcreations is located at 150 E. DIRECTIONS
1. In a small bowl, whisk together yogurt, Dijon mustard, and dill to make the dill sauce. Set aside. 2. Drain the salmon, then remove and discard the bones and skin. In a large bowl, mix the salmon, celery, onion, eggs, salt, and pepper. Form the mixture into 8 patties. Coat a
medium skillet with olive oil and heat it over medium-high heat. Cook the patties until browned on both sides, about 5 minutes per side. Put a dollop of the dill sauce on top of each patty and serve.
