My Son Kaden Is Heading to College!
Utah, Here We Come
That wasn’t quite the answer I expected. I’m just hoping he likes the business program as much as he likes the ski and bike trails. Jokes aside, I feel pretty good about dropping Kaden off at school. I’m excited for him to start the next phase of his life and gain more independence, and I’m also excited to visit him in Utah. He’ll only be a short plane ride or nine-hour drive away. Plus, the ski hills and national parks near his school sound like amazing places to visit. (Maybe the apple didn’t fall too far from the tree!) Of course, I have some mixed emotions, too. I’m a little nervous about what Kaden might get up to on his own. He also mentioned joining the rugby club since he won’t be playing football, which brings other concerns — as a physical therapist, I know just how dangerous rugby can be. Hopefully, the school has a great PT on call who can help him recover if anything goes wrong. One thing I do feel good about is Kaden’s roommate situation. University of Utah has an entire “date for a roommate” system where you download an app, fill out a questionnaire, and a computer offers you roommate “matches” you can chat with on social media. Fortunately, it worked out well for Kaden. Not only did he find a match, but his new roommate also lives in Anaheim Hills — only 30 minutes away! They’ve already gone surfing together, Kaden went to his birthday party at the beach, and Laura
As I write this, my wife Laura and I are packing up the car for a road trip to Utah. It’s almost time to drop our son Kaden off at University of Utah for his freshman year! I can still hardly believe that the long, grueling college application process is over. It was a hard slog, and it was even tougher for Kaden to choose a school once his acceptance letters started coming in. A couple of D2 and D3 schools wanted him to play football for them, but ultimately, he opted for the big-city life in Salt Lake over playing football in the country. (When we visited Northern State University in Aberdeen, South Dakota, he quickly found out from the other football players that there wasn’t much to do in town other than practice!) Kaden is joining University of Utah’s David Eccles School of Business. Right now, he’s planning to go for a business degree, potentially with an emphasis in business management or marketing. That said, this is a freshman business major talking — he could very well graduate as a veterinarian! When Kaden finally decided on University of Utah, I asked him why Utah ended up at the top of the list.
even met the roommate’s mom to talk about sheets and comforters. That familiarity should help make Kaden’s transition to college a little bit easier (although I’m sure there will still be plenty of surprises when they start living together). It’s going to feel so strange to drop Kaden off in Utah and leave him there, but I hope he loves his college experience. If you have adult kids yourself, I’d love to hear any advice you might have for getting through this weird time. Just let me know next time I see you in the clinic!

1 tsp dried thyme

4 cups shredded zucchini 1/2 cup corn kernels 6 green onions, chopped 3 garlic cloves, minced 1 1/4 cups chickpea flour
1 tsp each salt and pepper
1 tbsp olive oil
Vegan nacho cheese, black beans, salsa, and avocado for toppings
2 tsp ground cumin 1 tsp dried oregano
Directions
1. In a large bowl, combine all ingredients except oil and toppings. Stir until well combined and let rest for 5 minutes until a batter forms. 2. In a large skillet, warm the oil over medium heat. Scoop 1/4 cup of zucchini mixture into the skillet. Cook for 3–5 minutes, then flip. Cook for another 3–5 minutes until fritter is golden brown. Repeat with the remaining batter. 3. Serve topped with nacho cheese, black beans, salsa, and avocado.
