THE COLDEST PLACES ON EARTH

VOSTOK, ANTARCTICA This quaint location serves as a Russian research outpost in Antarctica. It was named after the captain of the first Russian Antarctic expedition. Underneath the station lies Lake Vostok, the largest subglacial lake in the world. Once, it reached a record of 128 below zero on July 21, 1983, which is the record for the world’s lowest recorded temperature to this day. MOUNT WASHINGTON If you’re wondering about a cold place a little closer to home, this year, New Hampshire’s Mount Washington was the second coldest place on Earth in 2018. The mountain plummeted to -36 F on Jan. 6, with a wind chill of -94 F. In 2017, the coldest spot on Earth was a tie between Eureka, Nunavut, in Canada and Jakutsk in Russia.

But no matter how cold it gets in the Hudson Valley, it could always be worse! Here are a few of the coldest places on Earth, which will make you grateful for a working furnace. OYMYAKON, RUSSIA Omyakon, a rural town in northern Russia, is only a few miles away from the Arctic Circle and is home to a few hundred people. The temperature in Oymyakon has averages 50 degrees below zero year- round, making it the coldest place on Earth actually inhabited by humans. The freezing weather not only keeps the ground frozen solid, but it makes a lot of technology useless.

INGREDIENTS

• 4 large carrots, cut into sticks • 1 tablespoon sugar • 2 tablespoons fresh chives, chopped • Salt and pepper

• 1 tablespoon olive oil • 8 small bone-in chicken thighs • 1 cup low-sodium chicken broth • 12 radishes, halved

DIRECTIONS 1. Heat olive oil in a large saucepan or Dutch oven over medium-high heat. 2. Season the chicken with salt and pepper. Brown in pan for 6 to 7 minutes per side. 3. Remove chicken from pan and scrape off excess fat. Add broth and stir in radishes, carrots, and sugar. 4. Return chicken to pan, placing on top of vegetables. Gently simmer with lid on pan for 15 to 20 minutes. Finish with chives.
