REQUIRED COURSES
6022 - FOOD NUTRITION CORE (.5 cr.) The study of foods and nutrition has seen dramatic change as research evolves linking the preparation and consumption of foods to overall health and wellness. Advances in technology impact the production, processing, packaging and service of foods. Students are exposed to multiple messages designed to influence their perceptions of the importance of food choices in their lives. Because they will provide for the nutritional needs of themselves and others, students need to make informed decisions about food and nutrition now and in their future roles as family, community and career leaders and citizens.
6047 - CULINARY I (1.0 cr.) As the first class in the Culinary Arts pathway this course introduces and unpacks the elements of the Culinary and Hospitality industry; while identifying career and educational opportunities in the field. In a mix of class and lab experiences students will begin to understand the vocabulary or language of culinary, how to perform basic hospitality services, and the required safety/sanitation and emergency procedures for the industry. The course also touches on the business components of a successful restaurant or food/beverage service and provides exposure to, and the opportunities to work on, professionalism, communication and teamwork skills needed to be a successful employee in the culinary industry.
5021 - CULINARY II (1.0 cr.) Prerequisite: 6047 - Culinary I MCC Dual Credit: FSA 109 Culinary Arts: Fundamentals of Food Preparation I (5 college credits)
This course is focused on fundamental culinary skills development. Students will be introduced to the fundamental concepts, skills and techniques of basic cookery and kitchen organization. Students will begin their Back of the House journey learning to recognize and use the kitchen equipment while developing foundation knife skills and cooking techniques. This course is dual credit with MCC as long as the HS Teacher is dual credit credentialed.
5139 - CAREER & FINANCIAL MANAGEMENT (1.0 cr.) ECO 103 MCC - Personal Money Mgmt.
This course provides students the opportunity to determine their personal interests and then research what careers they could potentially pursue based on these interests. Students also learn about financial management both on a personal and business level as well. This course is dual credit with MCC as long as the HS Teacher is dual credit credentialed and the student is taking the 1 credit HS course. Dual credit is not available when taken as a Virtual course.
