Shortcake with Strawberries cake ⅔ cup sugar ¼ cup shortening ¼ teaspoon salt 1 egg, unbeaten 1 teaspoon vanilla 1½ cups flour ½ cup whole milk 2 teaspoons baking powder 1. Preheat oven to 375°. 2. Cream shortening and sugar together with a hand mixer. 3. Add egg and vanilla. Beat thoroughly. 4. Sift flour. Add salt and baking powder. 5. Add to creamed shortening and sugar mixture, alternating with milk. 6. Pour into a greased loaf pan or 9x13-inch cake pan. 7. Bake for 35 minutes or until light golden brown. Test with a toothpick for doneness. strawberries 2 quarts fresh strawberries, rinsed, stemmed, and sliced ½ cup sugar Place berries in a bowl and cover with sugar. Stir berries slightly and refrigerate while juices develop, at least 30 minutes. to serve Cut slices or squares of shortcake. Place each in an individual serving bowl. Add strawberries and juice. Top with whipped cream, if desired.
