Go Loco for Coconut!

Chicken Lettuce Cups Ingredients: • 500 g chicken mince • 1 tablespoon olive oil • 3 cloves garlic, crushed • 1 lemongrass stalk, sliced • 1 tablespoon fresh grated ginger • juice of ½ a lime • ¼ cup Niulife Naked Coconut Amino Sauce • ¼ red cabbage, sliced • 3 carrots, grated • 1 cup coriander leaves, chopped • 1 tablespoon mint, chopped • 1 baby cos lettuce Directions: Heat oil in a frypan over medium heat. Add ginger, lemongrass and garlic. Add mince and stir until cooked. Add lime juice, coconut aminos, cabbage, carrot and herbs. Cook until soft. Remove from heat and spoon into lettuce cups.
