True Cinnamon

Do you know the difference between true (Ceylon) cinnamon and Chinese (cassia) cinnamon? When it comes to cinnamon, most people are unaware that not all varieties are the same!

True cinnamon (Cinnamomum verum) , also known as Ceylon cinnamon, possesses unique qualities that set it apart from Chinese cinnamon (Cinnamomum cassia) . First and foremost, the origin of these two varieties differs. True cinnamon predominantly hails from Sri Lanka, formerly known as Ceylon, while Chinese cinnamon is primarily cultivated in China, Indonesia, and other parts of Asia. One of the most distinctive features of true cinnamon is its delicate and complex flavour. It is a light golden tan colour and has a finer texture and is widely regarded as being of better quality. It’s mild, sophisticated taste makes it a perfect addition to desserts, beverages, and even savoury recipes. On the other hand, Chinese cinnamon possesses a stronger, bolder flavour, often described as spicier and more robust. Beyond culinary aspects, Cassia cinnamon contains significantly higher quantities of coumarin, a chemical compound found in several plant species, including

true cinnamon, but in much lesser quantities – in fact, it is rarely detectable in true cinnamon. Coumarin may be dangerous if taken in large quantities and is linked with kidney and liver problems. This is not a problem in terms of everyday use of cinnamon in baking, for example, but if you take a cinnamon supplement for its health benefits, it is safer to take only true cinnamon. Cinnamon has a long tradition of medicinal use, especially in Chinese medicine and Ayurveda, where it was used for treating indigestion, nausea, poor appetite, wind and intestinal cramping. Cinnamon Spiced Apple Crumble Ingredients: • 4 large apples, peeled, cored, and thinly sliced • 1 tablespoon lemon juice • 1 teaspoon true cinnamon powder • 1/2 cup all-purpose flour • 1/2 cup rolled oats • 1/2 cup brown sugar • 1/4 cup cold unsalted butter, cut into small cubes • 1/4 teaspoon salt Instructions: 1. Preheat the oven to 190°C. 2. Grease a baking dish. 3. In a bowl, toss the sliced apples with lemon juice and 1/2 teaspoon of true cinnamon. Transfer them to the prepared baking dish. 4. In a separate bowl, combine flour, oats, brown sugar, 1/2 teaspoon of true cinnamon, and salt. Add the cubed butter and mix until crumbly. 5. Sprinkle the crumble mixture evenly over the apples. 6. Bake for about 30-35 minutes or until the topping turns golden brown and the apples are tender. Remove from the oven and let it cool slightly. Serve warm with vanilla ice cream or whipped cream, if desired.
