I won’t claim to be the only chef in my house, but I do consider myself the unspoken designated cook! I love to cook and do it for my family almost every day. So, with October being National Cookbook Month, I want to share what my family’s cooking looks like. Personally, my favorite way to cook is grilling! I don’t have a specific type of meat or style I prefer most. I love grilling because it honestly makes any food taste better. As someone who doesn’t know much about intricate Italian or French cuisine, grilling is my way of creating great flavors much faster! Since I leave the office around 6 p.m., I’m on a bit of a time crunch for getting dinner on the table. I think that’s also part of the fun, though! My wife Sheri and I have a set evening routine: I usually get the cooking done, and after, I’ll start cleaning while she gets Winn ready for bed. We even make a menu plan for the week so our grocery trips aren’t overly hectic! While I may be the grill master, I always have one very special dish for my birthday. Every birthday, I always ask for the same fantastic cake: Texas Sheet Cake! Rich chocolate, creamy frosting, and crunchy pecans make this cake a family favorite. My mom always made this for us on every birthday when we were little, and that tradition continues to this day. I know every family has their own version of a Texas Sheet Cake, and each interpretation has an entirely different name. My mom calls it a Scotch Cake, and Sheri’s mom calls it a “Sheath” Cake for some unknown reason! Whatever you call it, it’s delicious. I remember during the pandemic when everyone was in a cooking frenzy to pass the time, I would bake two of these chocolate cakes at a time, one with milk chocolate and the other with dark chocolate! plenty of names and countless origin stories, we stick with our family’s Texas Sheet Cake recipe, which I wanted to share in this edition.
Besides this beloved birthday cake, I don’t actually follow recipes or bookmark cookbooks. I usually shake up any of my go-to recipes throughout the week and try new ingredients and flavors I know my family will like. Whether it’s tacos, rice bowls, or pasta, I try to make them a bit different every time. I always have to remember to ensure Sheri gets a meatless version of any meal! She’s been a vegetarian since we first met, and while she isn’t too strict about avoiding meat (she eats fish sometimes), I cook her food separately. When winter comes around, as does our “Sunday Soup Supper,” I always make her “fake meat” chili or no-chicken tortilla soup. It’s how I show I care! In the end, isn’t that what cooking is all about? Putting your effort and care into a meal for your loved ones is a labor of love, and I take pride in cooking for my family. This recipe comes courtesy of Sheri’s family, who calls this classic dessert a “sheath” cake.

While the regular fall season is open from Sept. 30–Oct. 29, you’ll want to attend their Pumpkin Festival, Oct. 28–29! The festival will feature live music, pumpkin pie, and more. DIRECTIONS
1/2 cup buttermilk 1 tsp baking soda 1 tsp vanilla extract
1. Bring margarine, water, and cocoa powder to a boil. 2. Mix flour and sugar together and pour margarine mixture over. 3. Add buttermilk, baking soda, vanilla extract, cinnamon, and eggs, and stir. 4. Pour mixture into a jelly roll pan and bake at 375 F for 20 minutes. 5. For the frosting: Heat margarine, cocoa powder, and milk. Remove from heat and add powdered sugar, nuts, and vanilla extract. 6. Spread frosting on hot cake and enjoy!

A Centerpiece Fall fruits and vegetables make great centerpiece arrangements because they have both seasonal colors and unique textures. Consider arranging a few squash or pumpkins in a bowl or basket and topping them with a bouquet of festive flowers. To make a swag, grab a few bundles of your favorite herbs, secure the stems with a rubber band, wrap them with twine, and tie them off, leaving a few inches of twine on both sides. Then, tie those ends together to form a loop and hang the swag on your door!
