At the beginning of the year, my wife’s cousin, Jose Luis Arredondo, and his fiancée, Monica Cano, approached me with a unique request.

Knowing my background in law, Jose Luis and Monica had decided that they wanted me to officiate their wedding! I was so surprised and honored by their request, and I accepted without hesitation.

However, I put a plan together and we practiced. When Oct. 8 finally arrived, I felt confident in our plan. Our friends and family were surprised to see me up there with Jose Luis and Monica, but I jokingly reassured them that this wedding was indeed real and legal before we started the ceremony. The wedding went smoothly and surprisingly quickly, and it was truly beautiful. There were plenty of happy tears and laughter throughout the day, and Jose Luis and Monica beamed the entire ceremony. “Our friends and family were surprised to see me up there with Jose Luis and Monica, but I jokingly reassured them that this wedding was indeed real and legal before we started the ceremony.” I’ve known Jose Luis over 12 years. Edith and I actually lived with him at one point in our lives, and if I can say one thing about Jose Luis, it’s that he is one of the most generous people I know. I was so touched that they asked me to be a part of their special day, and it was truly and honor to officiate their wedding. Overall, it was a beautiful and great experience, and I wish them a lifetime of love and happiness.

of my office. Funny enough, I wasn’t very concerned with the actual duties of a minister as I was about my role in the way the wedding was supposed to progress. So, most of my research revolved around those responsibilities. After I took an online class and paid the registration fee, I became an officiant, and I was able to legally marry Jose Luis and Monica. My research continued after my certification, which might sound silly, but this was an important event, and I love Jose Luis and Monica very much, so I wanted their day to be perfect. As October approached, Jose Luis and Monica came to visit me so that we could talk through their schedule of events. As it turned out, the only thing Jose Luis and Monica wanted for certain was a unity ropes ceremony, in which the bride and groom hold three strands (representing the bride, groom, and God) and weave them together. The braid represents the strengthening of the relationship and God being woven into the marriage. Other than that, my cousins told me that I could do whatever I wanted with the rest of the ceremony.

Although I am a bar-certified lawyer, I knew I would not be able to officiate without becoming a registered minister. I wasn’t completely sure how long the process would take, so I started researching and studying so I could be prepared come October. The internet is a wonderful place, so I was able to find all of the information I needed from the comfort

It’s the most wonderful time of year, when family reunites for meals, festivities, and nostalgia. You get to see loved ones a lot during this special time — sometimes too much. Between family dinners, gifts, and parties, there’s also a lot of money exchanged. Do your relatives always manage to get you to pick up the check with the promise that they’ll “get you next time,” except they never do? If you relate a little too much to “National Lampoon’s Christmas Vacation’s” family dynamics and are one waiter’s tip away from blowing a fuse, a money transfer app is what you need. Check out the pros and cons of these tools to avoid the awkward conversation and make getting your money back easy. Paypal One of the original money transfer sites, Paypal offers a user-friendly platform that thousands of businesses already use. Set up an account in a few steps and Paypal is ready to get you your money. It has a “Request Money” tab to send a friendly reminder to Cousin Joe that you’re waiting on the $50 you footed at Olive Garden. One drawback? If the person you request money from doesn’t have an account, they’ll have to set one up, which could be a deterrent to already reluctant debtors. Venmo Download Venmo on your phone, and after several account setup steps, you can add friends and send and receive payments. Venmo is fast, but not without cons. For one, there’s an automatic public setting that makes transactions viewable to anyone on Venmo — almost like a Facebook post of who is paying whom for what. You can make this information private; just be sure to change your settings. Square Cash Square Cash functions similarly to Paypal and Venmo, but you don’t have to have an account, which makes it potentially the best option to get procrastinators to send your money. No account, no excuses. The bottom line: While all these money transfer tools can make payments easier, they still don’t guarantee people will follow through. To avoid stress and conflict this holiday season, have conversations upfront about how the bill will be paid, whether it’s taking turns paying the sum or Venmo-ing each other when the check arrives. We all have our phones with us, so encourage tab-averse family members to hit download so they go to dinner with the mindset that they’ll get you this time. INSUFFICIENT EMPLOYEE TRAINING Improper training is common in many workplaces, not just refineries. While many plants are diligent about training employees, some are not. Failure to properly train employees is a workplace safety violation that often leads to injury. While refinery explosions make headlines, the aforementioned causes of injury are everyday threats to employees. Refineries are a common sight throughout Houston. Although they are major job creators with high pay and excellent benefits, refineries are also some of the nation’s most dangerous workplaces. Employees are injured at refineries almost daily, and as attorneys who represent refinery employees, we have seen some gruesome cases. While catastrophic injuries aren’t common, there are certain injuries we see repeatedly in cases at the Law Office of Don E. McClure, Jr. OPERATOR ERROR Many refinery tasks require at least two people. When one employee uses heavy machinery or work site tools, there is always potential that another worker will be injured. If one employee injures another, the employer

is still liable for the injury, and the injured employee still has a case.

VEHICLE-RELATED INJURIES Motor vehicles are a hazard to refinery employees even though they are not operated inside the refinery. Trucks and large equipment vehicles arrive carrying heavy cargo for work sites, and that cargo often falls and injures employees. FAULTY EQUIPMENT AND INADEQUATE MAINTENANCE In many Houston refineries, the equipment is out of date. It’s common for refinery owners to save money by delaying fixing or replacing equipment until they are required to do so by law or a union. Old or malfunctioning equipment is a common cause of injury.

2 tablespoons basil pesto Salt and pepper, to taste

DIRECTIONS 3 tablespoons grated fresh Parmesan cheese

Preheat oven to 400 F.

In large bowl, combine potatoes and pesto. Toss to coat. Transfer potatoes to large baking sheet or shallow roasting pan. Season with salt and pepper to taste. Roast 20 minutes and remove from oven. Sprinkle Parmesan cheese evenly over potatoes and put pan back in the oven. Roast for additional 10–15 minutes or until potatoes are tender and crispy. Remove from oven and serve warm.
