Recipe of the Month!
Strawberry Spinach Salad with Honey Balsamic Dressing
This refreshing salad celebrates fresh spring produce and is perfect as a side dish or light meal.
Ingredients:
For the Salad:
4 cups fresh spinach 1 cup strawberries, sliced
¼ cup red onion, thinly sliced ¼ cup feta cheese, crumbled ¼ cup pecans or walnuts, toasted ½ avocado, sliced (optional)
For the Honey Balsamic Dressing: ¼ cup balsamic vinegar 2 tbsp honey 1 tsp Dijon mustard ⅓ cup olive oil Salt and black pepper to taste
Instructions:
Make the Dressing: In a small bowl or jar, whisk together balsamic vinegar, honey, Dijon mustard, salt, and black pepper. 1. Slowly drizzle in olive oil while whisking until well combined. Assemble the Salad: In a large bowl, toss spinach, strawberries, red onion, and nuts. Gently add the crumbled feta and avocado slices. Dress & Serve Drizzle the honey balsamic dressing over the salad just before serving. Toss lightly and enjoy fresh!
