Vaš najnoviji projekat, restoran Mudra , definisan je kao art cuisine. Šta to znači? – Art cuisine je umetnost pripremanja i prezentovanja hrane. Želeli smo da definišemo vrhunski način kuvanja i služenja hrane bez upotrebe izraza fine dining, koji predstavlja besprekorne bele stolnjake i konobare u smokinzima, što je vrlo formalan način služenja hrane na skupim mestima. Mi naravno imamo takve elemente, ali na specifičan način – od nameštaja i stolnjaka, preko čaša i uniformi, i posvećujemo mnogo više pažnje samim jelima, kroz koja želimo da prenesemo emocije i širimo ljubav.
Šta je glavni motiv u vašim jelima? – Ideje za moja jela dolaze iz razmišljanja ili sećanja koja razrađujem koristeći svoje iskustvo i poznavanja tradicije, kulture i kulinarske tehnike. Podsećaju na bogatu paletu boja, koju komponujem da bih dobio vizuelnu harmoniju i čist ukus. Naša hrana je jednostavna, ali je napravljena od najboljih sastojaka, koristimo modernu tehniku i mnogo pažnje posvećujemo svakom detalju. Šta čini Mudru restoranom koji se ne sme zaobići ovog leta? – Jedinstvena lokacija pored samog mora, atmosfera, ambijent, usluga, hrana i mi!
Ovog leta regionalna scena vrhunskih restorana dobila je značajno pojačanje – poznatog šefa Enca Nerija, zvezdu novootvorenog restorana Mudra , koji se nalazi u Dobroti, u Crnoj Gori.
What is the main motif of your dishes? - My dishes originate in thoughts or memories, which I elaborate and de- velop using my experience of tradition, culture and techniques. They resemble a rich palette of colour that I assemble to create both optical harmony and clean flavours. Our food is simple, but made by sourcing the best ingredients availa- ble, using modern techniques, and with a lot of attention to detail! What makes Mudra an unmissable venue this summer? - Everything: its unique seaside lo- cation, atmosphere, ambience, service, food and us!
Your latest project, Mudra restau- rant, is dened as “art cuisine”. What does that mean? - Art Cuisine is the art of preparing and presenting food. We wanted to de- fine the finest way of cooking and pre- senting food without using the termi- nology of fine dining, which represents crisp tablecloths and waiters in tuxedos, a very formal way of serving food at ex- pensive venues. We are partly that, for sure, but we are adding a twist, from the furniture to the table-mats, glass- es and uniforms, giving much more im- portance to the role of the meal itself, as we spread pure emotions and love.

This summer has seen the regional upscale restaurant scene bring in a significant reinforcement in the form of renowned Master Chef Enzo Neri, star of the newly open Mudra restaurant in Dobrota, Montenegro.
