ĐELATO Iako je istorija sladoleda duga više od 2.000 godina, samo je jedan đelato, kre- masta, ledena poslastica zbog koje svi hrle u Italiju. Originalni recept či- ne mleko, jaja i šećer. Za razliku od drugih sladoleda, đelato sadrži ma- nje mehurića vazduha i masti, a više arome nego bilo koja druga vrsta le- denog deserta, što mu daje lakoću i svežinu, pa ga zbog toga mnogi u šali nazivaju italijanskim klima uređajem. Najpopularniji ukus je „baćo“, što zna- či poljubac, koji zapravo najbolje opisuje ovaj savršeni spoj čokolade i lešnika. Ina- če, đelato je u Italiju doneo ko drugi ne- go Marko Polo. Ovaj proslavljeni istraživač koji se vratio u svoju domovinu doneo je i priče i zapise sa putovanja iz Kine, među kojima su bili i recepti za mlečni sladoled. GELATO Although the history of ice cream dates back over 2,000 years, there’s only one gelato – the creamy, frozen dessert that prompts everyone to rush to Italy. The ori- ginal recipe consists of milk, eggs and su- gar. Unlike other ice creams, gelato con- tains fewer air bubbles and milk fat, and more aromas than any other type of fro- zen dessert, which gives it a lightness and freshness, which is why many jokingly re- fer to it as the Italian air conditioning unit. The most popular flavour is “bacio”, me- aning kiss, which actually best describes this perfect fusion of chocolate and hazel- nuts. Interestingly, gelato was brought to Italy by none other than Marco Polo. When he returned to his homeland, this famous explorer brought stories and travel notes from China that also included recipes for milk-based ice cream.

PANAKOTA Panakota je klasičan primer kako se samo od nekoliko sastojaka može na- praviti vrhunski desert. Ova, u buk- valnom prevodu kuvana krema pravi se od slatke pavlake, šećera, želatina i malo vanile. Modernije verzije sa- drže i cimet, bobičasto voće, karamel, sok od pomorandže, kokos, čokoladu... Tačna istorija nastanka ovog deserta ni- je poznata, ali se usko povezuje sa regi- jom Pijemont. To područje oduvek je bi- lo neprikladno za uzgoj maslina, pa su ljudi u svojim tradicionalnim receptima koristili maslac i mast umesto ulja. Ka- ko bi dobili maslac i mast, uzgajali su stoku, pa je u tom kraju mleka i pavla- ke bilo u izobilju. Zato se i pretpostavlja da je baš panakota tradicionalni desert ovog kraja jer je prepuna masne, slat- ke pavlake.

CANNOLI Sicilian cannoli, which translates as “small tubes”, symbolise fertility and prosperity. They consist of a crispy pastry in the form of a tube that is lled with sweetened cream. The most common ingredient is ricotta cheese, as a base, while chopped pis- tachios, chocolate, grated citrus fruits and candied cherries are also added... Najčešći sastojak je sir ri- kota, kao baza, a dodaju se i secka- ni pistaći, čokolada, rendani citrusi, kandirane trešnje… Legenda kaže da su za vreme arap- ske dominacije u Siciliji brojni hare- mi bili locirani oko grada Kaltanise- ta. Žene iz harema su se dosađivale i tako izmislile ove slatke poslastice, koje su oblikovale i punile slatkim sirom, lešnicima i medom.

PANNA COTTA Panna cotta is a classic example of how you can make a top dessert wi- th just a few ingredients. This dish that literally translates as boiled cream is made from sweetened cream, sugar, gelatin and a little vanilla. More mo- dern versions also contain cinnamon, berries, caramel, orange juice, coconut, chocolate etc. The exact history of this dessert’s cre- ation is unknown, but it is inextrica- bly linked to the region of Piedmont. This area was always inappropriate for the cultivation of olives, so in their tra- ditional recipes the locals used butter and fat instead of oil. In order to crea- te butter and fat, they raised cattle, so milk and cream were abundant in that area. That’s why it is assumed that panna cotta is a traditional dessert of this region, because it is full of thick, sweetened cream.
