Neobični mirisi i ukusi arapskog sveta nepogrešivo govore: „Doroti, više nisi u Kanzasu“ P ijaca u Abu Dabiju, jedna od retkih na otvorenom, na pr- vi pogled liči na sve druge. Raspoloženi prodavci ko- ji vas zovu da priđete, probate, kupi- te… Neobični mirisi arapskog sveta nepogrešivo govore: „Doroti, više ni- si u Kanzasu“. Čudni plodovi koje nikada nisam videla, niti znam kakvog su ukusa, tek su usputna dekoracija na ovoj pijaci, koja je posvećena samo jednom voću. Kraljici pustinje, izvoru života, plodu koji je dovoljan da preživite u pešča- nom bespuću - urmi. Zaštitnica arap- skog sveta na ovoj se pijaci pojavljuje u bezbroj boja i oblika. U Srbiji sam pro- bala samo onu sušenu i nisam imala pojma da urme mogu biti velike go- tovo kao kruške. To su one iz Saudij- ske Arabije, mesnate, sočne, slatke… Problem je nastao kada je trebalo da izaberem šta da kupim, jer prvo mo- raš da probaš da bi znao, a nasmejani prodavac je velikodušno nudio da se proba sve. E sad, da su samo urme ni po jada, probaš dve–tri, pa izabereš, ali ovo voće je upakovano u milion neve- rovatnih kombinacija, u slatkiše kakve nikada nisam okusila. Sa pomorandža- ma, pistaćima, kokosom, pa umotane u čokoladu, belu, crnu, mlečnu, sa ora- šastim plodovima i bez njih. Nakon

This guardian of the Arab world appears in this market in a myriad of colours and shapes. In Serbia I’d only tried the dried kind and I had no idea that dates can be almost as big as pears. Those are the ones from Saudi Arabia, meaty, juicy, sweet... The problem arose when it came to choosing what I should buy, because you first have to try in order to know, and the smiling trader generously offered to let me sample everything. Now, if they were just dates in question, you could try two or three and then choose, but here this fruit is packed in a million unbelievable combinations of the kinds of sweets that I’d never before tasted. HUMUS POTREBNO JE: 350 g nepečenih leble- bija, 1 kašičica sode bikarbone, 3–4 če- na belog luka, 50 g paste od susama, 3–5 kašičica soka od limuna, maslinovo ulje, malo mlevene paprike PRIPREMA: Leblebije ostavite preko noći u vodi da nabubre, a zatim ih očistite od tanke ljuske, ocedite i nalijte novom vodom, pa dodajte sodu bikarbonu. Kuvajte na laganoj vatri dok ne omekšaju, ohladi- te, procedite i propasirajte. Dodajte be- li luk, pastu od susama (tahini) i sok od limuna, pa napravite pastu u blenderu. Prelijte je maslinovim uljem i mleve- nom paprikom. FATUŠ POTREBNO JE: zelena salata, veza pe- šuna, 1/2 veze nane, 1 glavica luka, 5 rotkvica, 3 paradajza, 1 krastavac, 1 li- mun, 1 čen belog luka, arapski hleb ili tortilja, maslinovo ulje, sirup od na-

Iseckajte salatu, crni luk, peršun i na- nu. Isto to učinite i sa paradajzom, kra- stavcem i rotkvicama, ali njih iseckajte na kockice. Sve sjedinite, dodajte ma- slinovo ulje, limunov sok, izgnječeni beli luk i posolite. Na kraju, neposred-
