SPECIALITY FROM THE BYZANTINE PERIOD
Avgotaraho, or Bottargo, is a special form of caviar from mullet roe that is considered a world- class culinary delight. One of the oldest dishes in the world, it is made from roe dried in the sun, then pressed through rollers immersed in bees- wax. Avgotaraho is served as a luxury snack, cut into slices as thin as paper, sprinkled with pep- per, topped with a little olive oil and lemon juice, served with wine and dried figs.
CYCLOPS, FIRST MASTER CHEESEMAKER
Statistics show that a Greek citizen eats on average 25 kilos of cheese per year, which sur- passes even the French and Italians, who are known as the greatest lovers of this dairy treas- ure. Perhaps their love of cheese was inherited from the Cyclops, the mythical one-eyed giant from Homer’s “Odyssey”, who is known as the first master cheesemaker in history.
OLIVE TREES MORE VALUABLE THAN WATER
The unofficial border of the Mediterranean is determined by olive trees. As long as they ex- tend, the Mediterranean is nearby. If olives are the unit of measurement, then Greece is the heart of this region, because more than 120 million olive trees grow there. According to Greek my- thology, Athena, the goddess of wisdom, and Poseidon, the god of the seas, in competing to be the main deity, agreed that the patron of Ath- ens would be the one who offered the city the best gift. Even though Poseidon offered water, albeit salty, the gods agreed that the olive tree, gifted by Athena, had greater value.
VINEYARDS OF THE GOD DIONYSUS
Wine has been produced in Greece for more than 4,000 years, giving it unquestionably the longest wine tradition. Its vineyards are among the oldest, which endure thanks to the mild cli- mate of the Mediterranean, and apart from bear- ing grapes, this country was also the cradle of Di- onysus, the god of wine, fertility and enjoyment, who is celebrated by all winegrowers around the world.
