Danas postoji i Međunarodni dan palačinki, poznat i pod nazivom Mardi gra (Debeli utorak). Obeležava se dan pre Čiste srede, a datum zavisi od to- ga kada pada katolički Uskrs. Tada se širom sveta spremaju i gu- stiraju sve vrste i podvrste palačinki. One debele u Americi, tanane i gra- ciozne u Francuskoj... I slatke i slane. Filovane čokoladom, voćem, orasima, medom, pekmezom, šlagom, ali i me- som, pečurkama, sirom... Kratko se še- pure dok ih neko ne smaže u slast. Najčuvenije na svetu su palačinke krep Suzet. Mlada, lepa i slavna pari- ska glumica Suzet bila je tiha čežnja kuvarskog pomoćnika Žaka. Slučaj je namestio da Suzet svrati u restoran u kojem je Žak radio, a on je, lud od lju- bavi, samo za nju spremio palačinke u sosu od pomorandže... Oduševljena ukusom, poljubila ga je u čelo. Nazvao ih je njenim imenom i tako su, krajem 19. veka, u gradu ljubavi iz ljubavi na- stale i danas čuvene palačinke. Žak je za sobom ostavio trag, a to- me se nadaju i naučnici sa Univerzi- teta u Vulverhemptonu tvrdeći da su pronašli matematičku formulu za pri- premanje savršenih palačinki. Uzima- jući u obzir broj grudvica u smesi (L), ujednačenost i konzistenciju testa (C), temperaturu tiganja (T), pa čak i vre- me potrebno da se ispečena palačinka pojede (E), napravili su formulu: 100 – [10L – 7F + C(k – C) + T(m – T)] / (S – E) = savršene palačinke. Što je rezultat bliži broju 100, to su i palačinke bliže matematičkom savršenstvu. Sve broj- ke i znake su nadugačko objasnili, ali sumnjamo da bi ih zbog ove formule neka Suzet poljubila. Naravno, sećanje na omiljene pala- činke čuva svako od nas. To je dokaza- la i naša princeza Jelisaveta Karađor- đević. Kada je prvi put posle mnogo godina došla u Beograd i prošetala odajama Belog dvora, u kojem je ro- đena, setila se da je obožavala pala- činke sa šećerom i sokom od limuna koje je spremala dvorska kuvarica. Today there is also International Pancake Day, also known as Mardi Gras (Shrove/Fat Tuesday), which is celebrated the day be- fore Ash Wednesday, making it dependent on when Easter falls according to the Gre- gorian calendar. On that day all types and subtypes of pancakes are prepared and sampled around the world. From thick ones in America, to those thin and graceful ones in France... both sweet and savoury, filled with choc- olate, fruits, nuts, honey, jam and whipped cream, or with meat, mushrooms, cheese etc. They are flaunted for a short time, until someone devours them with relish. The world’s most famous pancake is Crêpes Suzette. A young, beautiful and cel- ebrated Parisian actress called Suzette was the silent desire of an assistant chef called Jacques. Circumstances conspired in such a way that Suzette called into the restaurant where Jacques worked, and he, crazy with love, prepared thin pancakes with orange sauce just for her... Delighted with the taste, she kissed him on the forehead. He named them after her, and so it was that in the late 19th century, in the city of love, an act of love created this pancake that remains the most famous today. Jacques left behind tracks, which pro- vides hope for scientists from the Univer- sity of Wolverhampton who claim to have found the mathematical formula to prepare the perfect pancake. Taking into account the number of lumps in the mixture (L), the uni- formity and consistency of the dough (C), the temperature of the pan (T) and even the time required to eat the prepared pan- cake (E), they have come up with the formu- la: 100 – [10L – 7F + C(k – C) + T(m – T)] / (S – E) = the perfect pancake. The closer the result is to 100, the closer the pancakes are to mathematical perfection. They have ex- plained all figures and signs at length, but we doubt that these formulas would cause Suzette to kiss them. Of course, we all preserve our own memory of our favourite pancake. This was demonstrated by our Princess Elizabeth Karađorđević. When she arrived in Belgrade for the first time after many years and strolled around the chambers of the White Palace, where she was born, she remembered that she had loved the pancakes with sugar and lemon juice that had been prepared by the court chef. We don’t know if there’s a restau- rant that has the princess’s favourite pan- cakes on its menu, but we do know that Belgrade is the only place where you can taste pancakes with“Eurocrem”! And when cherriesandPlazmabiscuitcrumbsareadd- ed... The taste is indescribable, which is why you shouldn’t miss the chance to try them at one of the city’s many pancake houses.

SAVRŠENE PALAČINKE Ako ste se pitali kako mame i bake prave savršene pa- lačinke, a ne znaju da vam daju recept, to je zato što su stekle iskustvo tokom vašeg odrastanja, pa sve procenjuju odoka. Da biste i bez tog iskustva napravili savršene palačinke, evo recepta kojem ne smete ništa da oduzmete niti dodate. Možete samo da udvostruči- te ili utrostručite navedene količine. Dakle, pomešajte 250 grama brašna sa pola litra mleka, četvrt litra kisele vode, 3 jajeta, 2 kašike ulja i prstohvatom soli. PERFECT PANCAKES If you’ve wondered how mothers and grandmothers are able to make perfect pancakes but unable to give you the recipe, it’s because they have gained experience over the years while you were growing up and they estimate everything by eye. In order for you to be able to make the perfect pancakes even without that experience, here’s a recipe that you shouldn’t add to or subtract from. You can only double or triple the stated amounts. So, mix 250 grams of flour wi- th half a litre of milk, a quarter of a litre of mineral water, 3 eggs, 2 tablespoons of oil and a pinch of salt.
