WINTER RECIPES

Not only do I prefer the fashion that comes with cooler weather, but I relish the many opportunities to connect with friends and loved ones over holiday meals and holiday parties. I have always dreamed about hosting many generations under one roof, enjoying a Thanksgiving meal. That was never the scenario for me as my family of Caribbean immigrants was spread across the world. With family members located in Grenada, England and throughout the U.S., I spent these impressionable moments with the same 5 or 6 faces I had always seen at every function since I was young. My grandmother, who just had her 90th birthday, was the head chef at our table. For special occasions, her food combined American traditions with some Caribbean flair. When I learned to cook, I took it upon myself to include the tastes I discovered from my travels to visit those distant relatives. All of this love, adventure and heritage can be experienced through my Bangers and Mash.
Ingredients
3 sprigs of fresh rosemary 4 sprigs of fresh thyme 1 red onion 1 glug of olive oil 2 cups of beef bone broth
5 dashes of balsamic vinegar 4 dashes of Worcestershire sauce 1 handful of all purpose flour ¼ teaspoon of caribbean curry powder (ex. Caribbean Rhythms) (optional)
6 Yukon Gold potatoes stick of butter 1 cup heavy cream (or milk) 8 sausages (bratwurst works best) 3 cloves of garlic (flattened)
(kettle & fire brand preferred)
Mash
Peel and boil the potatoes until a fork easily pierces the body of the potato. Drain and set aside to cool for 5 minutes . In a mixer (or by hand), mash the potatoes to a rough consistency. Add heavy cream (or milk) and ¼ stick of butter to the potatoes. Mash to desired consistency and add salt & pepper to taste. You can add more cream and butter as you deem necessary for your desired consistency.
