2. Quinoa Salad Bowl

**Ingredients:** - 1/2 cup cooked quinoa - 1/4 cup diced cucumber - 1/4 cup cherry tomatoes, halved - 1/4 cup cooked chickpeas - 1/4 cup diced bell pepper - 2 tablespoons feta cheese, crumbled

- 1 tablespoon olive oil - 1 teaspoon lemon juice - Salt and pepper to taste

**Instructions:** 1. In a bowl, combine the cooked quinoa, cucumber, cherry tomatoes, chickpeas, and bell pepper. 2. Drizzle with olive oil and lemon juice. Mix well. 3. Season with salt and pepper. 4. Sprinkle feta cheese on top. 5. Pack in a lunch container and keep cool until lunchtime.
