4. Colourful Veggie Sushi Rolls

**Ingredients:** - 1 cup sushi rice, cooked and cooled - 2 sheets nori (seaweed) - 1/4 cucumber, julienned - 1/4 carrot, julienned - 1/4 bell pepper, julienned - Soy sauce for dipping (optional)

**Instructions:** 1. Place a sheet of nori on a bamboo sushi mat. 2. Evenly spread half of the sushi rice over the nori, leaving a small margin at the top. 3. Arrange a line of cucumber, carrot, and bell pepper across the rice about one-third from the bottom. 4. Roll the sushi tightly from the bottom, using the mat to help create a firm roll. 5. Slice into 1-inch pieces. 6. Repeat with the remaining ingredients. 7. Pack with a small container of soy sauce for dipping.
