Before I ever got into travel, my husband and I were part of an investment group and attended a seminar at sea. One member had a heart attack and had to be air-lifted to an island. He was a seasoned cruiser, was well- established financially, and had always bought insurance … except for this trip. His suite became empty for the rest of the itinerary and donations were being taken to help pay for his medical expenses so he could get off the island when he recovered (we were told the life-flight helicopter ride was over $50,000).

March is Optimism Month, and I don’t know what underscores that more than hearing stories of those who have started out with less than nothing and have made an impact on the world. One of my favorites is George Washington Carver. Born a slave, he was kidnapped as a 6-week-old baby by slave raiders and only survived because his owner, Moses Carver, traded one of his finest horses to get him back. The Carvers raised young George and taught him to read and write. Since he wasn’t strong enough as a child to work the farm, he helped with household chores and learned to garden. He had a natural talent for it and became known as the local “plant doctor.” He was encouraged to pursue his studies, and as you can imagine, that path was fraught with difficulties and setbacks. But finally, at the age of 30, Carver became the first African American to earn a bachelor of science degree from Iowa State Agricultural School and two years later, a master of agriculture degree.

But Carver persevered. He knew the soil was depleted from years of farming cotton and the lack of crop rotation and encouraged them to plant peanuts, soybeans, and sweet potatoes to restore the health of the soil. The plan worked so well that there was now a surplus of these crops, and the farmers got mad at him because they didn’t know what to do with the excess. Undaunted, Carver worked on developing uses for them — eventually discovering over 300 products from peanuts and hundreds of uses for sweet potatoes and soybeans, contributing greatly to the economic improvement of the community.

He moved to Tuskegee Institute at the invitation of Booker T. Washington, where Carver persuaded him to open an agricultural school … one that no one wanted. The farmers thought they already knew how to farm, plus the children of farmers wanted to get as far away from farming as possible.

6 WAYS TO USE MINT Mint is extremely versatile and has many safe and fun uses beyond the garden.

1. Food: Mint is great to add to salads,

both fruit and lettuce, or it can even be combined with basil or cilantro to make a mean mint pesto.

2. Drinks: Create mint ice cubes to cool off summer drinks!

3. Tea: Steep your fresh mint leaves in boiling water for about five minutes and serve.

4. Hair rinse: Add one part mint tea to one part cider vinegar for a conditioning hair rinse.

5. Mouthwash: Use a quarter cup of fresh mint, bee-balm, lemon balm, basil, thyme, or oregano leaves and infuse in a quart of boiling water. Cool and strain the herbs. Store in the refrigerator.

6. Ease sunburn pain: Refrigerate mint tea. To use, apply with cotton pads.

A new Viking itinerary for 2023 that is generating a lot of interest is Capitals of Eastern Europe , a 17-day itinerary from Vienna to Bucharest, which takes our guests all the way to the Black Sea. We took our young girls to visit the George Washington Carver Museum at Tuskegee Institute, and it was inspiring to see the impact of this humble man. He lived simply on a salary of $125 per month. Upon his death, it was discovered that he saved most of his earnings, and $30,000 was given back to the Institute for continued research.

He would often hand out a poem to young people written by Edgar A. Guest called Figure It Out for Yourself , and I had the girls memorize it. The last paragraph says:

Ingredients

• 3/4 cup butter • 3/4 cup shortening • 2 cups brown sugar, firmly packed • 1/2 cup white sugar • 1 tbsp vanilla • 2 eggs

• 3 1/2 cups Gold Medal flour • 2 tsp baking soda • 1 tsp salt • 2 cups semi-sweet chocolate chips • 1–2 cups chocolate mini-morsels

With your equipment they all began. Get hold of yourself, and say: “I can. ”

On his tombstone was written, “He could have added fortune to fame, but caring for neither, he found happiness and honor in being helpful to the world.” If you want an enjoyable read, pick up a copy of The Lost Choice by New York Times bestselling author Andy Andrews, who weaves Carver’s story into a fascinating tale of mystery and inspiration. Andy’s personal story is a modern-day miracle in itself: He was homeless and living under a bridge at 16 years old when he was encouraged to read the stories of great men and women at a local library. There, he found both shelter and inspiration while reading over 200 biographies. The lessons he learned there are found in another well-told tale, and his first NY Times bestseller, The Traveler’s Gift.

Directions

1. Preheat oven to 325 F. 2. In a mixing bowl, cream butter, shortening, and sugar together until well-blended and fluffy. Add eggs and vanilla. 3. In a separate bowl, mix together flour, baking soda, and salt. Stir flour mixture into wet ingredients and mix until blended. 4. Stir in regular chocolate chips, plus mini-morsels (depending on how much chocolate you like in your cookies). 5. Using a teaspoon, scoop dough onto a cookie sheet and chill until firm (or freeze for later). 6. Space cookies about 2 inches apart and bake for 8–10 minutes or until barely browned. (Every oven is different, and the timing will also depend on how large they are and if they’re just cold or frozen.) 7. As I always say, the secret to just about every recipe is don’t overbake!

For us, the fact that there aren’t any casinos is amazing. It allows us to get to know many of the fellow travelers better,” Jane and Mike tell us. They have met many fascinating people on their cruises. “One couple in particular we actually met on our very first cruise and we continue to travel together. They are from the UK and are such great friends of ours now. Had we never had the opportunity to really get to know them, we would’ve missed out on a fabulous friendship.” Jane and Mike feel that Viking cruises are a first-class experience from start to finish.
