A YEAR LATER WITH LEXI HOW MY DOG HAS GROWN SINCE THE PUPPY STAGE
One year ago, our household was very different. At the time, we were corralling a 50-pound golden retriever puppy. Our lives were consumed by her goofy antics and making sure she didn’t have any accidents in the house (and protecting our shoes!). Today, that puppy is a few months shy of 2 years old, and we couldn’t imagine our home without her sweet presence. Many readers may remember stories of puppy Lexi from last year’s Dog Days of Summer cover article, so this year, I thought I would share a few more.
while she works. But she must sleep with one eye open because when my wife gets up to use the restroom or get a snack, Lexi follows, intent to not miss a single moment with her human mom. The habit I’ve formed with Lexi happens every evening. Sometimes, I do a little work on my laptop at the kitchen table in the evenings. When Lexi has decided I’ve worked long enough, she will stand next to me and bark. Now, I know what dog owners are thinking. Usually this means our dogs have to go outside or want a treat. Not Lexi. Instead, she wants me
teaching Lexi bad habits. But how can you say no to Lexi? Sure enough, now after every dinner, Lexi stands by the pantry and waits. She believes she is deserving of her bone cookie. Again, how do you say no? Despite no longer officially being a puppy, Lexi is still a ball of energy. This is never more evident than when we come home! Lexi will run to the sofa, jump on it, sit on her hind legs, lean back with her front paws in the air, and wait for pets from us. There’s no better way to come home! If there was one thing we wish Lexi would do, it’s swim. We cannot get her to jump in our pool! We would like to see Lexi swim since it’s a great way for her to cool down, but she stubbornly refuses. It’s even more strange because her littermate, who was adopted by some friends of ours, loves to swim. In fact, they can’t keep their dog out of the pool! In spite of her water aversion, Lexi has brought our family endless amounts of joy since we adopted her. We can’t imagine life without our energetic, lovable girl.

Lime Chicken With Corn and Poblano Salad

There’s still time to enjoy sweet summer corn with this lime chicken dish.
INGREDIENTS Chicken • 3 tbsp olive oil •
Corn and poblano salad • 2 tbsp olive oil •
1 cup all-purpose flour 1 1/2 tsp garlic powder 1/2 tsp cayenne pepper
2 poblano peppers, diced 2 garlic cloves, minced

1 14-oz can of corn 4 scallions, minced
1 1/2 tsp salt
3/4 tsp black pepper
Juice of 2 limes
Zest of 1 lime 8 chicken thighs
1/3 cup chopped cilantro
Salt and pepper
DIRECTIONS 1. Preheat oven to 400 F. 2. In a large oven-proof skillet, heat olive oil over medium heat.
3. In a bowl, whisk flour, spices, and lime zest. Dredge chicken in the mix to coat. 4. Add chicken, skin-side down, to skillet, then place skillet in the oven for 30–35 minutes. 5. In a medium skillet, heat olive oil and add poblanos. Sauté 4–5 minutes. Add garlic and sauté for another minute. 6. In a bowl, add poblano mix, corn, scallions, lime juice, and cilantro, toss and serve with the chicken.
