A NOTE FROM SYLVIA My warmest wishes go out to you and yours! At Twin Cities PBS (TPT) we are embracing the season and finding ways to celebrate with one another. One of my favorite TPT traditions is the Maker’s Market. We gather to share our homemade goods, from wooden toys to mini bundt cakes. I typically bring my Cranberry Conserve to share and thought some of you might enjoy the recipe: Sterilize canning jars. Combine 1 unpeeled, finely chopped orange with 2 cups of water in a pot and cook rapidly on medium high for 20 minutes. Add 1 quart of cranberries, 3 cups of sugar, and .5 cup seedless raisins to the cooked orange mixture, bringing slowly to a boil and stirring occasionally until mixture thickens (about 8 minutes). Pour hot conserve into hot jars, leaving 1/4-inch headspace. Wipe jar rims before tightening lids. Process jars with conserve for 5 minutes in a boiling water bath, remove, cool, and store. This conserve is great on a charcuterie board, in oatmeal, on toast, or as a side dish.

Our December music programming will add to your joy and festivities. I will be tuning in to El Mesias and the Minnesota Orchestra , a bilingual Spanish-English cross-cultural combination led by artistic director Ahmed Anzaldúa of George Frideric Handel’s Messiah and Navidad Nuestra by Argentinian composer Arial Ramirez. I am also looking forward to closing out the year with United in Song: A New Year’s Eve Special . For those more inclined toward dramas, Call the Midwife Holiday Special is sure to warm the heart. You can also tune in to two American Masters documentaries: The Adventures of Saul Bellow , an examination of the relationship between the controversial author and his work, and Groucho and Cavett , which profiles the enduring friendship between television personality Dick Cavett and his mentor Groucho Marx.

Let me just get this out of the way: I hate to cook, and I dread baking more than psychological thrillers. Given that confession, you might find it a little contrary to discover that I also LOVE cooking shows. I can plant myself on the sofa and watch in a mesmerized haze for hours as the likes of Kevin Belton and the timeless Julia Child sprinkle salt and crack open shellfish. They make me believe, if only for a few spell- binding hours, that cooking is pure magic. But here’s the thing: The rotating collection of cooking shows that TPT airs on Saturdays are often about so much more than how to follow a recipe. Without further adieu, here are a few reasons why I, a self-described reluctant cook, find myself sucked into the wonderful world of cooking shows. This summer, we had the honor of sharing with you a Great British Baking Show counterpart a little closer to home: The Great American Recipe , which features local Korean-American cooking expert and enthusiast, Tony Scherber. I dare you to resist the tears when one of the beloved contestants has to pack up their apron. Summed up, cooking shows represent the quick of life – and there’s no better way to spend a Saturday morning than with a piping hot cup of coffee and endless dreaming of all the things I would love to eat, but that I don’t want to cook.
Experience armchair travel at its finest.
Food is one of the ultimate lenses into the cultural heartbeat of a place. And I admit that I will readily wake up on the early side of the pillow on Saturday mornings just to catch New Scandinavian Cooking . After all, cooking and travel share one thing in common: It’s about the journey, not the destination.
Watching chefs chop veggies is like watching Bob Ross paint: It’s pure zen.
While I personally dread the experience of chopping vegetables, I will sit for hours

We hope you enjoy some favorite holiday recipes from staff at TPT. From Our Table to Yours
Latkes From the kitchen of Jessica Prody, Director of Communications. My family blends our holiday traditions to celebrate Chismukkah (Christmas and Hanukkah) every year. Latkes are a holiday staple.
Peel potatoes and shred. A food processor will make your life way easier if you have the grater attachment. Also shred onion (after peeling). Throw potatoes and onions in a bowl and squeeze the heck out of the mixture a handful at a time and transfer to dry bowl. In dry bowl, add in eggs, salt, and flour (for flour, use enough so the mixture is not super wet, but you don’t want it to be dry like dough) and mix well by hand. Turn on your oven fan or open a window, you’ll thank me later. In a large pan – skillets work great if you have one – pour in about 1/2 inch of oil, form your mixture into patties
and place in once oil is hot. When you see the edges browning, flip. In total, each latke should take about 5 minutes, depending on how thick your patty is. When done, transfer onto (and this is VERY IMPORTANT—TRADITION!) a brown paper bag to drain the oil. Sprinkle salt on to taste and serve with apple sauce or sour cream. Eating latkes with either apple sauce or sour cream is totally acceptable, however, do not eat both on one latke because that’d be sacrilege. Your stove-top will be covered in grease and the house will smell, but it’ll all be worth it.

1 lb of russet potatoes 1 medium-to-large white onion A couple of eggs 1/2 cup of flour 1/2 tablespoon of salt Lots of vegetable oil for frying (or peanut / canola)

Rotkol mit Apfel From the kitchen of Melinda Hoke, Vice Preside of Philanthropy. A 5th generation German recipe lovingly adapted. Translates to Sweet Red Cabbage with Apples.
INGREDIENTS
2 lbs, fresh head of red cabbage 1 cup red wine vinegar 1/2 cup brown sugar 1 medium onion, finely chopped 2 medium apples, peeled, cored, and sliced into matchsticks (I like granny smiths) 2 teaspoons salt, as needed 6 slices of bacon, cut into 1 inch strips 1 bay leaf Possible additions: red wine and raisins or red currants
Place cabbage, briefly, in a bowl of cold water. Then remove and quarter it, removing all the white core, and slice into 1/8 inch strips. Place the strips back into the water. Put the bacon into a dutch oven (preferred) or large skillet over low heat until fat is rendered. Add onion and cook until golden. Remove cabbage from water and add it to the pan. Add sugar, vinegar and salt. Briefly stir entire mixture. Add apples to pot. Cover pan and cook over medium-low heat for 1.5 hours, adding water as needed. During the cooking, sample and adjust flavors to taste. Consider a small amount of red wine, or raisins/ currants (I like the currants). Remove bay leaf before serving.
INGREDIENTS
1 spiral-cut half ham (8-10 lbs) 2 apples, peeled, cored, and cut in very thin slices GLAZE: 1 cup brown sugar 1/2 cup honey 1 tbsp spicy brown / dijon mustard
1 tbsp rice or cider vinegar 1 tbsp Worcestershire sauce
Pre-heat oven to 325. Mix all glaze ingredients and set aside. Put enough water in the bottom of a rimmed baking sheet or a shallow roasting pan to just cover the bottom of the pan. Place a rack in pan (a cooling rack works great for this!) and place ham, flat side down, on rack. Place sliced apples in a microwave-safe bowl. Cover loosely and microwave for 2 minutes. Insert cooked apple slices in ham between spiral cuts, dispersing as evenly as possible (leave a quarter inch or so space between apples.) Cover ham with foil and place in the oven for 1 hour. Remove foil and baste ham with about 1/3 of the glaze. Bake 15 minutes. Glaze with another 3rd of the glaze. Bake another 15 minutes. Turn oven up to 500, baste with remaining glaze and cook another 10 minutes. Let rest for 10-15 minutes. Discard apple slices before cutting the ham. (The apples have imparted their flavor to the ham, so they won't have much flavor – you won’t like them!)

Mix ingredients together saving melted butter for last. Stir butter in quickly as not to cook eggs. Prepare in a preheated heart-shaped vaflejern (waffle iron). Serve with your favorite toppings. Some suggestions are: smør (butter), sukker (sugar), syltetøy (jam), brunost (brown cheese - a Norwegian staple), hvitost (white cheese), rømme

1.25 lbs turkey meat, 2 smoked turkey wings, or one smoked turkey drumstick 2 quarts chicken broth (yes, with salt) 3 cloves of crushed garlic 1 large, chopped onion 2 seeded, chopped hot Chile peppers, such as jalapeno 4lbs greens (all collards or mixture of collards, turnip, and mustard greens — my favorite)
Wash greens and remove stems. Cut into pieces. Bring turkey, chicken broth, onion, peppers, and garlic, to boil in large pot. Reduce heat to low, cover and simmer for about 1.5 hours until tender. Add greens, return to boil. Simmer uncovered, about 45 minutes or until greens are tender. Remove turkey to cool. Remove turkey from bones and discard. Return turkey meat to pot. Serve with cornbread (sops up juice!).

Italian Biscotti Cookies From the kitchen of Steve Nardini, Senior System Administrator, IT. A traditional hard, Italian cookie. Dunk it in coffee or Chianti.

WET STUFF 4 eggs, lightly beaten 1 cup sugar 1/4 lb butter, melted 1/2 oz anise seed (soaked in Brandy, opt.) 1 tsp vanilla flavoring 1 tsp almond flavoring 1/2 cup slivered almonds 1/2 cup currants, cranberries, etc. (opt.) 1/2 cup mini-chocolate chips (opt.)
6 eggs – well beaten 1/4 cup sugar 1 tablespoon shortening
Mix all the Wet Stuff together completely. Add the Dry Stuff slowly and mix thoroughly. This mixture becomes very thick – it’s good for your arms. After mixing, spread out on a cookie sheet into a “loaf”, about 1 to 1.5 inches thick, 4 inches wide, and 12 inches long. This quantity should form about 2 loaves. Cook loaf about 30 minutes at 350°, until the edges just start to brown. Remove from oven and let cool at least 15 minutes. Slice as you would a loaf of bread, making cookies about 1/2” thick and 4 inches long. Lay the cookies flat on the cookie trays and return to 325° oven for an additional 10 minutes on each side. Watch carefully, so they don’t turn too brown.
1 teaspoon vanilla 1/2 teaspoon soda dash of salt enough flour to make stiff dough mix (about 2.5 to 3 cups) Roll out dough. Cut into diamond shapes with a hole in the middle. Twist one end of diamond through hole. Fry like donuts. Make sure both sides are fried (flip each Ausuki) as you fry at 365 degrees in two inches of shortening. Drain on paper towels. Sprinkle with powdered sugar before serving.

No Longer Having Dinner with Loneliness By Robert Goldfarb
Most didn't call back. It quickly became evident they saw dinner tables as set for couples, not for odd numbers, and three was proving to be an especially odd number. I was now a single person, apparently half as important as I had been when married for nearly seventy years. Could I convince them it wasn't food I needed but conversation that had fled my silent home? Was there a way to enjoy food now that I was alone? Muriel and I subscribed to the New York Times recipe collection. I would begin cooking again, as I often had when Muriel and I dined at home.
When I lost my wife Muriel to a sudden and unexpected illness, loneliness claimed her side of our bed. The sharp edges of loneliness pierced me awake. Learning how to be alone but not lonely is a class that men of my generation never took. We went from our mothers to war to our wives and were rarely alone. My family knew that and surrounded me with love during the first weeks of our loss. Before long, loneliness sat opposite me at the dinner table. It sneered when reminding me with every bite that I was destined to eat most meals alone for the rest of my life. If I were to enjoy food again, I would have to show loneliness I was unavailable for dinner. Muriel and I had many friends, the closest of whom immediately called and invited me to dinner. I gratefully accepted. I began calling other friends deeper in our address book, assuming they would gladly meet me at a restaurant. Surprisingly, many said they were booked for weeks ahead and would have to call back.
I was now a single person, apparently half as important as I had been when married for nearly seventy years.
As the months become years since I lost Muriel, I find it easier to eat dinner alone.
I do go out to dinner two, sometimes three, evenings a week with the same close friends whose early invitations kept loneliness at bay. Does loneliness still come to my home? Yes, but now only for an occasional assault and knows it is not welcome at my dinner table.

Can You Rejuvenate an Older Brain? From the Neuroscience Lab to Real Life By Francine Toder
In another recent study, "among all U.S. adults, an estimated 41.0% of dementia cases were attributable to 12 risk factors …" including hypertension, obesity, and physical inactivity. So, any new activities stimulating the mind or body help ward off decline and maybe even dementia. Some techniques that rejuvenate blood may hold promise for improving the performance of the aging human brain in the future. Bruce Goldman, a writer for Stanford University's School of Medicine newsletter, reported that the losses in cognitive functioning that begin in midlife, between age 50 and 60, may not be inevitable.
We all understand that no magic elixir can stop or even slow the human brain or skeletal muscles from aging. But is that true? After two decades of research with mice, Tony Wyss-Coray, PhD, a neuroscientist at Stanford University, has some ideas about what might work. Follow-up trials with humans have indeed demonstrated the possibilities. According to Wyss-Coray, quoted in Stanford University's School of Medicine newsletter, Scope, "when we treated old mice with repeated intravenous infusions of young plasma (the liquid fraction of blood), these mice became smarter, performing more like young mice on multiple cognitive tests. Conversely, young mice exposed to aged blood or treated with aged plasma experienced accelerated aging of the brain and a loss of cognitive function." That means that, at least in the lab, for now, some techniques that rejuvenate blood may hold promise for improving the performance of the aging human brain in the future.
Physical exercise and managing everyday stress are the best ways to ward off cognitive decline.
Walking is a good example — a half-hour walking a dog or a solo stroll. Older adults can also use meditation or mindfulness while doing ordinary routines like washing dishes to lower blood pressure and manage body weight. Beyond that, some actions strengthen neuronal connections in the brain by simply taking up a new hobby. Learn that foreign language you never had time to do before. Play an instrument. Find a physical activity that you enjoy. Or do sudoku puzzles. Maybe your preferred method is cleaning your home, gardening, or taking a chair yoga class. Move your body and stretch your mind in what- ever ways bring you pleasure.
