Beef Tenderloin Steak (served with steamed sautéed vegetables) INGREDIENTS • Beef tenderloin (Chalmar beef, APEX product) • Mash potato with parsley • Zucchini, pumpkin, carrots, Broccoli, potato • (steamed and sautéed, APEX products)

La Digue Sunset

INGREDIENTS • White Takamaka • Passion Fruit juice • Mojito Syrup • Grenadine syrup

• Pumpkin purée • Beetroot purée • Olive oil • Bulb of garlic • Fresh parsley • Salt • Pepper • Fresh Basil

INSTRUCTIONS Shake all the ingredients together. Pour in a chilled margarita glass and add a dash of grenadine. Garnish with an orange wheel and mint sprig. Enjoy!

Le Repaire Special

INSTRUCTIONS • Use 500g of Chalmar beef tenderloin (Apex product). • Season the beef with Salt and pepper. • Grill the beef over a griddle. Cook each side for 5 minutes for a rare steak. • Serve with steamed sautéed vegetables and mashed potato. • Garnish with pumpkin purée, beetroot purée, a grilled garlic bulb and fried fresh parsley.

INGREDIENTS • Strawberry • Dark Takamaka • lime • ground pepper

INSTRUCTIONS Shake all the ingredients together. Pour in a chilled cocktail glass and sprinkle ground pepper on top. Garnish with a cherry. Enjoy!
