One of my favorite things to do with my family is to watch SpaceX rockets launching into space — across the night skies right from our own backyard. SpaceX launches rockets from Vandenberg Space Force Base about 150 miles southwest of our house, carrying reconnaissance and other satellites into orbit. I track the launch plans on a website, show my kids videos of the takeoff on my phone, then watch with them as the rocket reaches our field of vision and soars in a blazing arc across the night skies. After we can no longer see it in the sky, we turn to my phone again to watch video of the rocket landing on the deck of a ship in the Pacific Ocean. My two older kids, who are 4 and 3 years old, find it fascinating, and it’s a lot of fun to watch together. I have always been fascinated by the aerospace industry. Most of my family, including my dad, worked in the industry, which was a major presence in our area. My dad worked as an engineer for a company that manufactured space suits, so we have always been pretty big into space exploration. My parents took me to Kennedy Space Center when I was young, and I’ve always enjoyed learning about space flight. I might have become an engineer, too. I studied software engineering and computer programming for a bit. Eventually, my interest in the law took over, but space flight and the engineering that drives it are still fascinating to me. I see that same fascination in my son. Like a lot of boys, he likes everything flight-related. He just randomly starts talking about space sometimes, observing that rockets land on a boat. I also see it in the TV shows he watches, like “Little Einsteins,” where the animated characters blast off on missions to explore different places and planets. My 4-year-old daughter loves watching, too, but she is a little quieter about it.

I hope my kids will pick up the same fascination for space, technology, and human innovation — and for our ability to do crazy things through technology. It’s worth noting that the space flight pioneer Robert Goddard was born during this month in 1882. People made fun of Goddard for trying to launch a vehicle into space, but he earned recognition as the Father of the Space Age when his invention, the first liquid-fueled rocket, surpassed the speed of sound. People ridiculed Elon Musk’s early space travel endeavors before his later successes with SpaceX, but I am a big Elon Musk fan. He tries to do the impossible. He is a living example of how if you get the best minds in the room and work hard at difficult questions — and imagine big — you can accomplish a lot more than you think you can. He is a big proponent of human development and flourishing, and he has shown how technology can support that. I think he’s headed in the right direction. While there’s a lot of room to question Musk’s decisions sometimes, there is also a lot to admire there. I would be very happy if my son became an engineer like his grandpa. I want him to be just as fascinated by exploring space as his forebears have been. PANCHO’S INSPIRING STORY

In a heartwarming story of canine courage, a rescue dog named Pancho has emerged as a hero after putting his life on the line to defend his family during a home invasion. The events unfolded on a fateful night in early June when an intruder broke into Pancho’s home in northern New Mexico. Pancho, an 8-year-old rescue pup, sprang into action the moment the intruder entered the home. Without hesitation, the brave dog leaped at the would-be criminal, determined to protect his family at all costs. In the ensuing struggle, Pancho suffered a deep neck wound that miraculously missed his vital organs. But the attack didn’t stop there — the intruder then proceeded to kick Pancho repeatedly. Undeterred by his injuries, Pancho managed to hold the intruder at bay until others could intervene and restrain the criminal. Pancho’s family then embarked on a desperate two-hour journey to Albuquerque, searching for emergency veterinary care.

Remarkably, the family ended up at the doorstep of Española Humane, the same rescue organization where they had adopted Pancho. The dedicated staff immediately sprang into action, performing extensive surgery to clean and repair Pancho’s traumatic neck wound. The brave pup stopped breathing at one point, but the veterinary team successfully revived him. Despite his severe injuries, Pancho has steadily regained his strength. His tail never stops wagging, and he responds enthusiastically whenever he hears the words “good boy.” Pancho’s dad promised him a lifetime of rib-eye steaks to reward his heroic actions. Pancho’s story is a powerful reminder of the unwavering loyalty and bravery rescue animals can possess. If you’re considering adding a furry friend to your family, consider visiting your local animal shelter or rescue organization. You never know — you might just find your very own guardian angel, just like Pancho’s family did.

THE WELL-EQUIPPED KITCHEN, TRUCK DRIVER STYLE CAB COOKERY

Three essentials for the well-equipped kitchen are becoming hot items for semi-truck cabs. Slow cookers, air fryers, and rice cookers are helping long-haul drivers avoid truckstop fast food and costly sit-down meals. Here are a four techniques professional drivers are using to elevate their diet. The Multitasker. “Throw a slow cooker and a rice cooker into your truck, cook some rice or pasta as you drive, and top it off with a half-can of veggies and a can of tuna or chicken meat,” says a member of a truckers’ subreddit, r/Truckers , on the social website Reddit. A can of beans with rice or pasta also makes a meal. “For breakfast, mix a cup of dry instant oatmeal, a dollop of peanut butter, a banana, and a couple of teaspoons of honey,” writes a driver, posting as NeoAcario. The Spice Maestro. “Use a variety of seasonings and sauces to turn the same food into different meals,” says a poster called Flame5135. “Garlic chicken and rice. Creole chicken and rice. Fiesta chicken and rice. Teriyaki chicken and rice. The options are unlimited,” they write. Or, cook a pork shoulder in your slow cooker, keep leftovers

in your fridge, and use them for a variety of recipes. “One night it can be pork tacos. One night it can be BBQ pork sandwiches. One night it can be loaded mashed potatoes.”

Speed Chef. Another trucker recommends using an air fryer to prepare boneless chicken thighs, which he adds to premade packaged salads. “Chicken in the air fryer for 20 minutes and some salad makes a tasty grill(ed) chicken salad,” writes Successful_Status_23. Smart Snacker. Some traditionalists avoid cooking by dining on yogurt with granola and, as cliche as it sounds, “An apple a day...” says DriverlessPlanet on Reddit. Others add apples, raisins, and pre-cut fruit to oatmeal. If you run out of other options, poster CjBizwy recommends filling the gaps with “plant-based protein powder with oat milk, instead of snacking on junky stuff.”

As cooler temperatures set in, these meal-prep techniques may be a helpful tool for replacing bad eating habits with good ones.
