CRAFTED IN WOOD TT Liquor, the people who devised our cocktails at CDW2017, really do know their spirits; after all, they stock more than 1000 of them. And between them their experts have accumulated almost four decades of knowledge in plant and grain alcohols. When you think of what it takes to make your favourite spirit, ingredients like grapes, barley, or herbs probably come to mind. But any aged liquor owes just as much of its flavour to something which isn’t an ingredient at all: wood. From cognac to bourbon, rye to rum, many spirits spend years aging in wooden casks. Over time these casks impart all kinds of flavours. As the spirit seeps slowly into the barrel, it starts to pick up some of those aged flavours: perhaps vanilla or caramel, toffee or spice.
