FESTIVE FARE, FAMILY FUN Merry Meals and Lasting Memories
For me, December will always be about cabbage rolls and pork roast.
I will again cross the border with my wife and children this Christmas to enjoy the day with her. I can’t wait to taste the food I love and spend time with someone who has always been there for me. I’ve been thinking a lot about getting some of her beloved recipes to pass along to my daughter; that way, we can keep those meals and the tradition alive for future generations. The new year is already shaping up to be a momentous time for my family, as my mother turns 85 on Jan. 6. Her birthday will give us another opportunity to celebrate life with her — and, of course, enjoy another fantastic meal. I hope that by sharing some of my family’s holiday history, I’ve inspired you to look back at your cherished memories and appreciate the gift of creating new ones moving forward. The special holiday moments — and the recipes — we’ve shared with those we’ve loved throughout our lives tell the stories of who we are. Every Christmas of my 56 years has been spent with my mother in Canada. A native of Croatia (in the former Yugoslavia), she is undoubtedly the best cook in our family. For decades, my immediate and extended family members have gathered at her house for an unbelievable meal — featuring the staples of her homeland — and an opportunity to reconnect after a long year. No matter how busy we all get in the preceding months, we make time to arrange our schedules to savor Mom’s amazing culinary creations and mark another holiday season. This tradition has continued through generations, even after my father’s passing in 1997. I’m blessed to maintain such strong ties to my loved ones at this stage of life. Most of us can connect in person with a relatively short car ride instead of a long airline flight, and our annual Christmas dinners remained a family tradition through the challenges of COVID-19. As the years have passed, what began as an occasion for my cousins and me to play together as children has transformed into a special day for adults to catch up on careers, life achievements, and families of our own. Despite changes to the crowd size over time
(with my immediate family and uncle generally being the most frequent guests these days), my mother’s house has always been a place of enduring togetherness and comfort. Although I’ve lived in the U.S. for about 30 years, Canada will always hold a special place in my heart. My parents worked as factory laborers, teaching me the value of hard work from an early age. My efforts in college and the eventual start of my practice would not have been possible without their guidance and support. The more time you spend with someone, the better you get to know them. Since my mother has been in my life longer than anyone else, she can sense whether something is stressing me out or if I’m happy. It means so much to me to still have that connection with her. She is one of the most intuitive people I know.

Ingredients
• 1 lb dried white beans • 3 tbsp olive oil • 1 medium yellow onion, quartered • 2 shallots, quartered • 1 stick celery, chopped • 5 garlic cloves, minced • 1 tbsp dried thyme
• 1 tbsp dried oregano • 1/2 tsp smoked paprika • 1/2 tsp chili flakes • 6–8 cups vegetable stock • Salt and black pepper, to taste • 1 1/2 tbsp white miso • 1–2 tbsp lemon juice
Directions
1. Soak beans overnight in water with 1 tbsp of salt. Drain and set aside. 2. Heat oil in a large pot over medium heat, then add onions, shallots, and celery. Brown all sides lightly, about 10 minutes. 3. Add garlic, thyme, oregano, paprika, and chili flakes. Stir and sauté about 1–2 minutes. 4. Add beans and 6 cups of stock. Season with salt and pepper. Bring to a boil, then lower heat to a simmer. Cook for 1 1/2 hours partially covered, adding more stock if needed. 5. In a measuring cup, combine miso and a cup of hot stock from the pot. Whisk to dissolve, then pour back into the pot. Test doneness, add lemon juice, then serve garnished with chopped parsley.
